  • In this episode Peter and Logan discuss how Imperial Yeast grows their culture using next level sanitation and why it's not always the best idea for you to try at home. They explain common homebrewing myths like pitching yeast cold and that more cells equal better beer. Ultimately yeast are a living organism that we subject to a very stressful environment in our home brew so making sure that they are treated properly before they hit our wort is not only essential to making consistent, high quality beer but is also overlooked far to often.

    I wet well done here. I think the whole DIY chem lab/supply warehouse/gear engineering in the garage is pretty much exactly why Homebrew suppliers started drying up. A TON of brewers want to buy a thing once and manage it themselves instead of supporting the supply chain, then get upset when the place stops offering stuff or goes completely out of business.

    I never smack my pack more than an hour before pitch. The pack will sit until room temp. Never a starter either. All my harvested yeast is kept in short mason jars and is refrigerated and re-pitched as needed. Always great attenuation. So many myths with yeast.

      Genus Brewing I don’t know. I have to receive one first. I’ve been waiting for them to send me one since early Spring. I keep being told that one is getting shipped to me “this week” or “next week”, but nothing has arrived.

    My mentor at our home brew shop turned me away from washing yeast in favor of making larger starter than I need. Save the extra yeast, use it for the next starter, etc. Been working great. I love my yeasty pets.

    I only use dry yeast. It stays good for years so I don't have to worry that I have to use it soon.

    I don't think home brewers compare their yeast cultivation capabilities to professionals. I think home brewers do it primarily to save money and learn more about it. Informative video though!

      So I have never understood that... yeast isn't that expensive. Something like $6 for a pouch if I remember correctly? So buying new yeast is actually more economical, easier, and saves time if you're homebrewing for personal use. The only reason I can gather that harvesting yeast would be a good thing is if you are trying to brew in high volumes (thus money saving), but even then you introduce variability that is really tough to predict if you're trying to replicate a recipe.

    Should have listened to the home brew guy. I bought the "cheaper". But this is great info. Next time I go, I'm for sure going to give imperial a try. Problem is I bought for 3 recipes. So it might be a bit. Good stuff guys love the content!

    I love this channel. But I have to say, I’ve been harvesting and washing my yeast for years and have made incredible beers from it, so..... I’m a home brewer, man. Everything I do is a hope it turns out science experiment. LOL

    Where do you guys get those plastic kegs from? Working on setting up a small brewery and wanted to look into them as we would rather not invest in a keg cleaner if possible

      I get them from Pioneer, although I don't believe they are the only source of them. They are made by Dolium.
