I tried dry salt brine and the bacon butter method on 2 turkeys last year, it was fantastic, tasty, moist and juicy, one of the best recipes for the holidays.
My Turkey arrived late this year and I don’t have 72 hours to brine it. I’ve got maybe a little less than 48 hours. Would it still turn out good? BTW I tried this last year and it was AMAZING! Friends all love it and makes us Asians living in the states feel a little sense of home. ❤
Hi Marion. I’m a huge fan. I was wondering if you could next time make Thai seafood fried rice. I love fried rice and am aware that you have uploaded different fried rice receipts but making Thai seafood fried rice would be incredible
Wow I never had turkey Asian style! Great idea! Did you use all that bacon butter or just under the skin by the breast? I probably make a turkey breast only because it's only for 2 people. Looked soo yummy! Wished you'd cut into it so we could see how juicy it was. 👍❤ Yet another great recipe!
I really love your recipes! I want to make this but I’m concerned about the dry brine. Do you leave it on to roast, no rinse? If so, please assure me it won’t taste too salty.😁
Hi Marion, I have been following you for a while on Facebook. I absolutely adore everything you do. I am English but have lived in france for the last 40 years. My Mother worked for a chinese family in the UK, I was raised with their two chinese daughters. I love love love asian cuisine: chinese, thai, philippino,korean and japanese food. I have dry brined my 3 kilo turkey, and made my bacon butter, yes! I was wondering how long to cook my turkey, as your turkey is bigger?( I thought maybe half an hour less.) Could I mix Yakatori sauce with the hoisin sauce as it is sweet and delicious
So you added fake “smoked” color to an oven cooked turkey and that’s supposed to be good? I’ll pass…. Was there a reason you didn’t show the actual meat ?

How do the cooking times work with larger turkeys? Do you cook longer at 350° and baste on the final hour?
