Aside from actual celiac disease I believe ( at least here in the USA) that a lot of the issues are not simply to wheat or gluten but to what they do to our food. Pesticides, frankenfood etc.
Have a cousin who had “ celiac” in America but was fine eating the wheat products in Italy and Greece.

USA foods are packed with all sorts of things that aren't good with health, while as the EU regulate the food produce, I live in Italy and I can tell.

If you have celiac disease you must avoid gluten at all cost.
I am italian and if I eat gluten I will end up at the hospital.

@@il3mendo what I mean is I believe there are conditions that mimic celiac disease except it’s not. If you truly have celiac yeah wheat is a problem.

@@cleocatra9324 I can tell you that the main difference is the fermentation which is actually longer here in Italy.
Rather then that, I would raccomend to you the Ezekiel bread ( be aware of any additive/glucose or other additive).
Many problem with wheat are due to their lectins/fructans.
Also wheat is rich of Glycemic index.
I wish you all the best

Some people say celiac without being diagnosed. True celiac patients cannot eat bread in any country. Those with Gluten sensitivity might be able to though.
