Tangy Aloo Masala (Punjabi Dhaba style!)

  • Hot and tangy, this potato curry has it all. I love how how the yogurt, tomato, and spices come together to make this recipe extra special.
    Perfect served with my Classic Soft Rotis (recipe up on my channel :D))
    INGREDIENTS
    3 tbsp canola oil
    1 tsp cumin seeds
    1 small red onion, thinly sliced
    3 cloves garlic, finely grated
    2 inches ginger, finely grated
    3/4 cup plain yogurt
    2 tsp kashmiri chili powder
    2 tsp coriander powder
    1 tsp black pepper
    1 tsp ground cumin
    ½ tsp turmeric
    1.5 cups pureed fresh tomatoes (approximately 2 medium tomatoes)
    Salt to taste
    2 cups water
    2 tsp chaat masala
    2 tsp kasoori methi
    ½ tsp garam masala
    2 cups baby potatoes, boiled until firm but tender and peeled
    2 tbsp butter
    1/2 green pepper, seeded and thinly sliced
    3 tbsp chopped fresh coriander
    METHOD
    To a large frying pan, heat oil on medium heat, and add cumin seeds. Allow to crackle for 10 seconds, then add sliced onions. Saute onions until translucent and soft. Then add garlic, and ginger and cook for an additional 30 seconds or until fragrant.
    In a small bowl, whisk together yogurt, chili powder, coriander powder, black pepper, cumin, and turmeric until well combined.
    Drop heat to low, and pour in spiced yogurt. Stir to mix. Cook on medium-low heat for 7-8 minutes, or until oil separates around the edges of the cooked yogurt.
    Add pureed tomatoes and season with salt to taste. Increase heat to medium and cook for 15 minutes, or until the tomatoes reduce down, become jammy, and the oil begins to separate along the edges.
    Add water and increase heat to high. Once at a simmer, allow gravy to slightly thicken and then season with chaat masala, kasoori methi, and garam masala. Then add in potatoes, and toss to coat in sauce. Cook for 5-6 minutes to allow potatoes to absorb the flavour of the sauce.
    Finally add butter, sliced green peppers and chopped coriander, and stir through.
    Serve with your favourite chapathis, or rotis. Enjoy!

    Hey Vijaya, I made this a week ago and I may have messed up a little bit. Since I am lazy, I used tomato puree (~3 cups) rather than puree my own tomatoes. My second mistake was to double the recipe ('cos I'm greedy). The result was that the sheer liquid volume didn't reduce down to anywhere near the point yours did. It was still quite tangy and very edible, but not quite what I saw in the vid! Now I'm thinking of doing it again but switching out the potato with something like cubed chicken thighs. I guess that would go in near the beginning? Keep it up ma'am!

    Love anything with chat masala and/or drird methi. Will be giving this a go, but at the moment it is wrong time of the year here to have new potatoes in season

    Hi Vijaya, may I know why you didn't add the chat masala, kasuri methi, and garam masala with the rest of the spices with the yogurt at the beginning? what difference does it make to the overall flavor?

      That’s a really great question! In this recipe I add these particular spices at the end to maintain their fragrance. I don’t want to cook them out for a long time for that reason 👍🏽

    I just taken early retirement and have taken up cooking which I am really enjoying but I have one problem how to scale up the ingredients for example for butter chicken I asked using 4lbs so how do i scale the ingredients
