  • A comforting chicken khichdi recipe on days when you want to eat something simple yet delicious.
    CHICKEN KHICHDA
    Ingredients
    200 grams Tata Sampann Multi Grain Khichdi Mix
    3½ tbsps ghee
    400 grams boneless chicken legs, cut into 1 inch pieces
    3 tbsps yogurt
    1 tbsp ginger-garlic paste
    Salt to taste
    2 tsps red chilli powder
    ¼ tsp turmeric powder
    1 tsp coriander powder
    ¼ tsp cumin powder
    1 tsp garam masala powder
    ½ lemon
    ½ cup browned onions + for garnish
    10-15 mint leaves
    10-15 coriander sprigs
    Red chilli oil for drizzling
    Lemon wedges to serve
    Method
    1. Take Tata Sampann Multi Grain Khichdi Mix in a strainer and wash it thoroughly with water.
    2. Heat 2 tbsps ghee in a non-stick pressure cooker, add the spice mix and saute well.
    3. Add the washed grains and add to the pressure cooker, sauté well. Add sufficient water and mix.
    4. Place the lid on and cook till 5 whistles are released. Allow the pressure to be released completely.
    5. Meanwhile, add the chicken in a bowl. Add yogurt, ginger-garlic paste, salt, red chilli powder, turmeric powder, coriander powder, cumin powder and garam masala powder.
    6. Squeeze lemon, ¼ cup browned onions, chop mint leaves and add to the chicken mixture. Chop coriander and add to the same mixture. Mix till well combined. Set aside.
    7. Heat remaining ghee in a non-stick deep pan, add the chicken and sauté on high heat for 3-4 minutes. Add the cooked khichdi and mix till well combined. Add sufficient water to adjust the consistency. Mix well and add remaining browned onions and mix well.
    8. Cover and cook on low heat for 10-15 minutes or till the chicken is cooked completely.
    9. Using a hand blender and mash the mixture. Transfer into serving bowl.
    10. Garnish with browned onions, drizzle a little red chilli oil, mint sprig and serve hot with lemon wedges.
