      @DikoManI think that isbecuse the machines are different. This is for the Pro, the other is for the Express. The grind settings are also different between these machines.

    This is... by far... the single best... coffee "dialing in" video I have ever seen. I have watched close to 150 videos and save them under a "Coffee" playlist. This is the absolute best and that chart you displayed is pure gold. I am an engineer thus I research accordingly. Point being: this is no light compliment. Major kudos Lifestyle Lab!

      @@LifestyleLab_ yes it can, I just did.. the answer is actually in the manual!! So when turn on the program mode pres the button (1 or 2 cups) AND KEEP IT PRESSED for as many seconds as you want the preinfusion. I tried few variants and 8-9 seconds works best for me. When releasing the button the brewing starts. You will press the button when you want the yield to stop, for me around 38-40g of coffee in a total of 30sec from when preinfusion started. Again, it’s similar with Manual mode, just that it gets memorized. Cheers

    Agree. Hands down the best video I have ever watched. Simple and easy to replay as needed. I purchased so many different coffee beans to try to find my perfect latte and this is the only video that explains how to dial in properly for dark/ medium/light beans. Brilliant video. I’m still dialing in my machine now but at least I know what I am doing and getting closer to my perfect shot.

    Just got a new breville barista pro! So I bought some beans from a local cafe chain and they let me try a shot of it, tasted too sour so I was kinda disappointed.     You are a great teacher. Explain with logic and proof is not an easy task since it requires very thorough understanding of what you are explaining.       The timer on the Barista Pro starts automatically.
      Always remember, you should not be aiming for a specific time for your final shot, this is a rough starting point to get your flow correct. You ALWAYS need to dial in further to taste. Your coffee might taste best at 25 seconds, or maybe 45 seconds. Maybe 45 grams out, maybe 30 grams out... take a watch through the second part of the video

      @@valar12 The sourness is a sign of under-extraction. The times given in the manual are way too short. Adjust the grind size, dose amount, and tamp pressure to increase the time of extraction. Use the manual function so you can let the extraction go as long as you want. What works for me is to measure an 18 gram dose (use a scale) for a double shot and to stop the extraction 20 - 30 seconds AFTER you see the first drip fall into the cup. I usually go for the higher end, towards the 30 second mark. Be careful, though, if you go too long, the shot will be bitter. It will really depend on your coffee. I get my beans from a local roaster and what I do seems to work fine for what I buy. I would advise against buying your beans from your local grocery store as they won’t be fresh. Try to find a local coffee shop that roasts their own beans and try different sources and roasts. Also look for one of those WDT things. They really help to break up the clumps in the grind, prevents channeling, and help to give you a more even extraction.

      Many internet tutorials includes pre-infusion time into their shot and recommend 25-32s, what do you think? Of course ultimately is still about the taste.

      I think that the range of times floating around the internet are due to a combination of some accounting for pre-infusion, and also just the fact that coffees vary so greatly! This video includes the pre-infusion because that's how the Barista Pro shot timer works.
      Your statement is bang on, in the end its all about taste.

    This is an excellent video guys, very informative and nicely done. I have a Barista Touch and struggling to dial in. What ever I do the extraction starts at 5-6 seconds mark. If it is around 7 seconds mark then the flow is very slow and the coffee is very bitter.
    Could you do a dial in video for Barista Touch please ? Thanks !!

    Quick tip, when adjusting the grind from the finest settings (below 5) and back up to more course settings, it is a good idea to rotate the knob max to min and back to the middle before making any more adjustments. The grinder isn’t very good IMO.

    The thermojet heaters are quite unstable and there is no thermal mass to the group head. No matter how well you prep, the output will always suffer due to this. The Barista Touch has the same problems. To help, always run water through the group immediately prior to pulling a shot so the system has refilled with water.
    Otherwise, stick with the tried and true Barista Express and you'll have a much better time.
    Also, you don't need to put it in programming mode so it doesn't stop the shot, just run it manually. Pressing and holding the one or two cup buttons will run the machine in preinfusion mode. Once you release the button, the machine goes to full pressure and will run until you press the button to stop it.

    Best video on CZcams for the pro. Fantastic step by step instructions. Just one question.. when I'm weighing the extraction I find I have to stop the flow at about 32 grams to account for a time lag of the machine finishing the flow to make it to 36 grams. This can be very much hit and miss and rarely do I get the bullseye of 36. Any tips? Thanks

      You might stop it at 45 grams! You might stop at 30. Every coffee and every persons tastes will vary. The 36 grams in 25-30 seconds is a STARTING point only

      @@LifestyleLab_ just a note - this point led to a 2 day argument with my partner when dialing it. She was trying to land 36g in the cup in 30-35, where as I understood it to be 2:1 in 30--36sec as an indicator of the appropriate rate (and just pushing the off button once it hit 36 sec).
      I've lost a kilo of coffee trying to dial this in and I'm nowhere closer to where I started - your video is good though

    Excellent video. I like to stick to the "Normale" stds.: 7 g IN /25 mL OUT for one cup and double those amounts (14 g/50 mL) for two cups. My question is: do you always need the percolation time to be 30-35" (preinfusion included) regardless of the mass of coffee for as long as you keep the brew ratio constant? Thank you!

      No, the 30-35 seconds is a very rough guide to get people started. Once you're at the point where you're tasting and dialing in, the "standards" can go out the window while you dial in to your personal taste!

      Your shot time for a single will be shorter than a double, because you want to keep a similar flow rate as well as brew ratio to your dialed in double shot. With that being said, cutting the time completely in half is often too fast a flow. I would aim for around 20 seconds for a single shot as a starting point

      Always be consistent, and start the time from pre-infusion.

      From what I gathered, his timing is just to get you started. It doesn’t necessarily matter when he started timing because your going to be adjusting from your first shot via taste anyway. And from his timing video, it sounds like you don’t need to worry about pre infusion unless you are sharing a recipe or bringing a recipe to a different machine.

    Why would you time your shots over 30 to 35 seconds when it's recommended to be between 27 to 30 seconds for 18 grams of coffee?
    Breville includes preinfusion as part of the shot time!

      Any specific time is a meant to be used as a rough starting point only, not a final product. Hence why different sources will recommend different times. The goal is to get you to a point where you can start tasting, and tweaking using the concepts in the second part of the video.
      No one time is going to be right for every coffee, and more importantly, every person! You need to dial in to taste, not to a generic time

    Thanks! This was very helpful dialing in our espresso shots with our Barista Pro. I have picked up most of your recommended accessories. I was having a bit of a problem getting consistent extractions. I ended up pre-heating the portafilter in my cup using water from an electric kettle. Having the portafilter the same temperature each time I pulled a shot made dialing it in much more consistent. It also pre-heats the cup which is nice. I let it sit this way while I am grinding the beans. Also I started by adjusting the internal ring inside the grinder to get it close. Then it only took a couple clicks to hit the mark.

    I agree with everyone else. Short, to the point and very informative. I use all the accessories he mentions in the video but also a WDT tool and a puck screen. On my Breville Barista Pro, I did have to drop my internal grind size from 6 (default) to 4. Also, I wasn’t happy with the amount of crema I was getting, so I decided to go to a local roaster who roasts every other day. Made a huge difference on the amount of crema on the shot, so bean freshness plays a role as well.

    Have been brewing decent coffee with my new machine for about 2 weeks now, and just dialed it in a bit better. Not a fan of black, but tasting it black between adjustments can help you dial it in. I got all the bitterness to go away and it's a significantly better end product now.

    I just got my Barista Pro and I can understand the frustration most users faced here without a pressure gauge. My shots are sour and acidic no matter how much I tamper and time the extraction. In the end, I stick with the double-wall baskets, adjust the grind setting to 1, increase the temperature to the hottest and my shots have achieve consistency.

      Could you tell me the perfect setting internal and external grind setting please? I have just bought the pro and I’m really struggling! Admittedly I bought a kilo of lavazza Rossa off Amazon and I’m not sure if they have gone off as I’m new to all this. Can’t seam to get the cream to foam and taste very bitter!

      @CampbellLT1985 nobody will be able to tell you the correct setting for your coffee. It varies greatly from coffee to coffee and machine to machine. With that being said, buying Lavazza, coffee off of Amazon is a surefire way to have bitter disappointing shots. Crema is quite literally a product of how fresh your coffee is. And I can guarantee your coffee is months and months and months past stale.

      Thank you for your reply. I have literally gone through most of the bag trying to dial in. So best thing to do is to ditch that and buy beans fresh from a local coffee shop?
      Also after you have programmed it and it’s in at 36 grams at 30 seconds, next time do you just press the double shot button and the machine remembers?

    I bought a Sage Barrista Pro today and have been working on getting a good shot. This is my first "real" espresso machine. Previously we had a phillips saeco automatic machine. So I am an absolute novice!
    I've been at it for 4 hours and went through about 300 grams of coffee. Which was expected of course.
    The Coffee I'm using is:
    - A freshly opend bag of L'OR ONYX
    - Intensity 12 (Intense & Powerfull)
    - I think it's to dark and oily for this machine
    The tools I'm using aren't ok I think:
    - Kitchen scale which measures to the gram (will need to buy a different one)
    - The standard Sage Tamper and my finger (I'll buy a palm equalizer and tamper)
    - The standard Sage Portafilter with the single wall dual shot filter (I'm considering buying a open bottom portafilter so i can see if there is channeling)
    I eventually got a fairly good shot out of it. The taste is awesome, the crema is ok! However the settings I'm using concern me a bit.
    - The main bur is set to 1 (which is the finest it can be as far as I know)
    - The grind coarseness of the grinder is set to 1 (which is the finest it can be as far as I know)
    - Weight:
    --> I started with 18 gram weighed per shot then grind
    --> I went down to 16 gram weighed per shot then grind
    --> I then configured the grinder time to 15.5 seconds which results in 16/17 grams of coffee grounds
    --> While grinding I wiggle the portafilter around to make the grounds fill evenly and make sure no coffee spills
    - I measured my presure with the Tamper on a people and I'm between 15 and 20 kg
    --> The pressure is exerted as evenly as possible
    --> Before tempering I move the coffee around so it's even, then I move the coffee that is over the edge to the middle from four sides with my finger, then tap the portafilter on a rubberpad on the counter
    --> The result consistently presses the Tamper into the filter, using my fingers around the Tamper brim, my fingers are on the fiter filter side when done with the Tamper. The Tamper is at a height where the champfer of the thickest part starts, as seen from the side of the filter.
    - For the shot:
    --> I set the heat 1 setting higher
    --> I preheat the porta filter
    --> I do a shot without the portafilter to make sure it's clean
    --> I set the portafilter and turn it in, in the beginning needing quite a bit of force. Afterwards noticing that keeping the handle on the portafilter in a different way makes it easier.
    --> On the machines timer the coffee starts to come out after 8 seconds and runs for 18 to 20 seconds.
    The resulting espresso has a full taste and is neither sour nor bitter! The crema is probably a bit thing though.
    My concerns:
    - The grind settings:
    --> I'm at the absolute thinest grind the machine can do, this concerns me.
    --> I will be getting lighter blends, which will probably need a coarser grind, but am a bit concerned about reaching the limit on the first day/calibration
    - The storage basket for the filters. This gets wet! Is that ok, or will that damage the other filters?
    - From the videos I saw this machine should run 18 to 25 seconds. Which I'm just barely getting. Is this ok am doing something wrong?
    Any advise/help/considerations would be greatly appreciated! I can make a video of my process and make it available to you if that helps.
