  • Steoelting U431-109I2 Ice cream machine has problems with mix not going into the barrel and slow output on the other side. The air pump will need cleaned and rebuilt.

    Ahh I have never searched the interwebs looking for service videos but it it nice to see another U431 master out there! I have considered making some how-to videos myself but I also have learned the hard way...

      I do not do detailed repairs on how to set up the machine is done. The refrigeration sections the same as any other machine that’s why I did it on that section only. There’s only so many ice cream places around so I keep that a little more confidential.

      ​@HVACRSurvival okay so I've got an interesting problem thats got me stumped and of course on a busy weekend. So I thought of your video and out of desperation here I am lol. Contact relays for both freeze cylinders are hammering and clanking like crazy. Every once in awhile it alarms out for "high pressure cutout". I'm suspecting a bad board but the machine is only 2 years old...any input?

      Honestly it's kind of its own occupation in itself. Even with 24 some plus years experience and being factory trained, it has taken quite a bit to get a good grasp on just this particular brand. Other brands have they're own Special technics and ways of thinking.

    Nice to see a video on this! I deal with restaurant equipment, hvac and kitchen equipment. Keeps us busy! I have worked on some very neglected ice cream machines. Been to electro freeze classes a couple times

      It's cool to hear I'm not the only one doing 50 different specialties. Electro freeze seams a little behind on technology from the machines I have worked on. But they work....so whatever works I guess.😁 It was funny to see a mechanical temp control installed to control the consistency. 👍👍

      I haven't noticed that before 🤦‍♂️🤷‍♂️, but I also haven't had to run a wire up the feed tube before either😝. The constant turnover of employees is the root cause of most of my service calls at this location. Most places do a better job maintaining the machine. That could have developed in a short time with the machine being left off without being cleaned when drained.

    Work on those Stoeltings all the time. My favorite brand! We also have lots of hc dukes that we maintain and service but love these stoeltings. They will go non stop for hours usually without stopping.

      This particular store chain has issues with the employees that creates most of my problems. I'm not sure how they would cause this issue but they're the only ones that have it. Pretty good machine otherwise if you just take care of it and understand how it works.

      When the mix leaks inside the machine and hardens, you can literally take a chisel and Hammer to get it out. But we eat it 😂😂

      Thanks Brad, it's been a long journey. Although I've been doing HVAC for 24 years I've only done ice cream for 3 years and heavy Refrigeration for the last five.

      Stoelting is one of the better brands out there. The people using the machine are what causes more problems then the machine itself.

      @@Pretzel114 Factory generally is the best and only place that I know of. Stoelting is the only one that I know of that offers the training, you might be able to get it through saniserv or Electro freeze, I'm not sure because we're not a dealer for them. basically look up whatever manufacturer you're interested in and call them and ask. I can tell you for a fact Taylor will not help you.

      I can get help from Stoelting but you may have to wait 1 to 3 hours to get a call back at times. That don't help you when you got other things to do. There better at taking your calls lately.

      @@HVACRSurvival - you’re so awesome reaching out to ask. I’ve got a barrel that has a bad pressure switch and I’ll be changing that this week. But it’s also been over freezing for a while. I’m super fluid in EF units and been posting lots of videos to help other folks for the last year. None of my locations had Stoelting and then I picked up 3 in one swoop. Feel like I’m starting from scratch with them cuz they’re nothing like the other systems. Tech support has also been helpful and I’m devouring the service manuals. But seeing someone else in action is WAY helpful. So few of us soft serve guys out here. Just had to replace a failed crimp on a remote connection hose that dumped all 14 lbs on me. :-(. Really appreciate you!!

      @@restaurantrepairs so you have the manuals? And tech service will talk to you? That's half the battle. Taylor is horrible about helping anyone. I have the most experience with the U431 pressurized machine and just about any of the gravity ones. Plus the slushies I've replaced one barrel so far. I have another barrel to do yet.

      I’ve got a hypothetical for you. If the barrel of a soft serve should be pressurized to 30psi, but you only pressurized it to 16. What would happen. I feel like there won’t be enough pressure to push against the hardened cream once frozen but as it draws out that would resolve itself. Or will it not be enough pressure to push? Thoughts?

      Don't forget the reason for the pressure is so that you can have the proper over run. The flights or auger blades help move the ice cream to the front, as long as more product is being pushed into the barrel it'll come out the front.

    I thought it looks like it's going out the other hose which is yellowed and not see though. shortly later in video yep!
    I sure don't service ice cream machines, but it looked like water/bubble were going up the clear tube and back down below the vertical stainless, with only one other possible place to go.
    someones it's easier to catch things third party, even by camera. I know for fact we all miss things first person or are preoccupied, sometimes it pays to have a skilled helper with :)

      The mix comes liquid in a 2.5 gallon bag. There's a lot of fine details that you need to know, that's for sure.

    How long have you been working on these?
    I have Loctite 592 but never used 567. I wonder if it is as chemical resistant as 592.

      I'm not sure, I only use it for thread sealant and it works for that. It doesn't harden is what I like about it.

      @@HVACRSurvival I think 592 does. It has an orange scent to it. Plumbing joints sealed with it can be used right away, but the instructions say to allow it to cure for 12 hours if it is to be in contact with oil or strong chemicals. The last time I used it was on a washdown hose on a CNC machine.

      I worked on a few Electro freeze machines, they seem like a decent company. Taylor on the other hand.... I'm not impressed with their unwillingness to allow people become trained on the machines. I brought that up in the Stoelting training class that they need to stop providing phone support to people that's not been to their training class if that's how Taylor's going to be. I tell people all the time you're going to be stuck with one dealer if you purchase a Taylor. The old ones aren't bad but the new ones are a different story. No support online or factory.

      @@HVACRSurvival I live in south Florida. These units need 50-70degree water temp coming in. My water temp was 90. My boss was trying to tell me that was ok. 2 months later, we replaced automatic expansion valves and water valves instead of quoting a small chiller...

    I have an O431 Stoelting soft serve machine which uses exactly this same pump. I am curious about this finger test (the one in which the pump must turn off after approximately 3 seconds). This test was developed by you or is a recommendation of the factory? I just replaced the pump kit (rebuild) and it passed to the finger test. However, I am not getting the proper overrun in the ice cream (it is much lower that the one configured (first I set to 60 % overrun and then changed to 70 %, but nothing changed in the finished product). Do you have any idea about what is going on? Thank you very much and congratulation for your nice work.

      I forget to mention that the scrappler blades are brand new (I know it has something to do with the overrun).

      The blades have very little to do with the overrun, you gotta remember just cause you upped the pressure don’t mean it’s gonna be instantaneous. It has to work its way into the mix, actually the Factory showed us that trick, I also use a pressure gauge to verify it’s shutting off around 23 PSI and coming on around 17 PSI. I would check the hose between the pump and the barrel. Make sure there’s nothing in there. You’re only supposed to have 40% overrun most the time. You usually only see around 30 to 35%.

      @@HVACRSurvival , thank you very much for your response. So, even if you set the overrun to 60 or 70 % (knob inside the machine) you will get a overrun of around 40 % most of the time? Even with the pump just rebuild (I changed pyston an cylinder, check and reed valves)?

      @@HVACRSurvival Is it possible to get a real 60 % overrun? That is really strange, because in not pressurized machines we get 30 % overrun (only using the carburetor) and with a pressurized machine we should be able to get 60 % overrun.

    Just rebuilt both of my machines. One is working as it should and the other is not. The 2nd machine seems as if the pump isn't working at all as the vanilla is yellow and has no air in it. The liquid mix is being pushed back through the air hose too. Any idea what I could've done wrong?

      You could but something to keep in mind is when the mix continues to be stirred and not served it it will break down, what that means is when the ice cream comes out it will be soft even though its at the correct temperature. I run into this a lot at stores that don't sell a lot of ice cream.

      There's several things it could be. Without having a chance to look at the machine it's too difficult to do online or over the phone. I would look up a authorized dealer for the brand of machine that you have.

    Why do you rinse out the sanitizer with ice cream mix? Why not pump water in it?

      Because I don't want it mixed in with the ice cream mix. If you read the instructions for the sanitizer you do NOT rise with water once the machine is sanitized. You also don't sanitize until your ready to use the machine.

      HVACR Survival since some sanitizer got sloshed on the tops of the drums (what are they called?), don’t you need to fill it all the way to purge it all out? Or is it non toxic and fine if a little gets into ice cream that someone eats?

      The sanitizer is safe to eat within reason. I just don't want it creating any product issues such as taste or looks. I'm very OCD so I want it to be as perfect as possible. If you really want to be positively absolutely sure everything's is clean as it can be you could let some mix into the barrel and put it on clean mode then drain it out. But generally the sanitizer will float on top of the ice cream mix, that's why you need to have the front open so the sanitizer will flow straight out the front. Otherwise it will float on top of the mix and you'll never get it out without draining it.

    I work on a machine just like this one, and have always found that left side always has a problem with with that check valve and small cube always plugging up. I have installed a rebuilt kit, what causes it to do that?

      Air leaks I believe. I have completely rebuilt the pump and changed the check valve but it still happens sometimes.

    How do you test the mix pump if it not running?

      does the overrun pressure switch prevent it from coming on?

      Verify voltage is at the pump or not.

    was on a job interview 2 days back on a company hiring for ice cream machines and refrigeration, haven't decided yet, any advice?

      when the person that used to take care of the ice cream quit they asked me to do it. Most everyone told me not to do it because it was a pain in the butt but I don't find it to be the case. To me it separates you from the other people and makes you more valuable. But I wouldn't want to do it as my only job. But if you can do Refrigeration in addition to that it wouldn't be bad.

      I do when I feel the need to. We take care of this machine on a regular basis because its a lease. Its normally around 38%-40%

      I asked a bit to early in the video. Those pumps are a pain when you don't service them often. I service alot of f-231 gravity fed. Good work!! Be safe.

      We're changing the u431s out this July, we changed one out of five so far to gravity stoeltings. It might be the f-231. I forget. We haven't had but 1 or 2 small problems after a year of service so far.

    Do you get your parts directly from Stoelting?

      No, we use to but we got screwed into buying them from a distributor.

      I get my parts from Ralph Wright Refrigeration out of Ft Worth, Texas. They are really good people and usually get parts sent out quickly and prices are good.
