On our huge Filipino food tour in Bacolod City, we started our day off with some sweets, since Bacolod is the sugar capital of the Philippines. Here they have some popular Filipino foods that are must-tries.
Next stop on our Filipino street food tour was to try a mammoth beef bone soup, cansi. Cansi is a popular dish here in Bacolod and the one at Eron’s Cansi House comes with a mammoth beef bone inside. We couldn’t believe the size of this mammoth beef bone cansi soup, definitely one of the best foods to eat in the Philippines.
We continued our huge Filipino street food tour trying some local pasalubong. Pasalubong is really popular in the Philippines. Afterwards, our Filipino street food tour took us to try the mysterious soup no.5. This is a Filipino food that is actually quite hard to find, and a very exotic soup because of the mysterious main ingredient!
We finished our Filipino food tour at the sweetest place of them all to try the popular Bacolod cakes at Calea. These cakes are one of the number one foods to eat in Bacolod!

We had batwan in my Barangay in Lanao del Norte, Mindanao. Batwan can grow everywhere in Mindanao not only in that area. But we never use it for cooking, we just ate it with salt same with green mangoes. 🤤 I’m drooling 🤤

Cansi should be the best beef soup if not in the world but in the philippines.. Cansi is like a fusion of beef bulalo or beef nilaga with beef sinigang.
We LOVED the cansi, so unique and flavourful. We can't get over the batuan fruit, it really makes a dish taste so good. Thanks a lot for watching and commenting😄
Bacolod City is one the best organized and well-planned urban centers in the Philippines. Very livable, wide and well-paved roads, and in the countryside the sweet intoxicating aroma of sugar. The famous Chicken Inasal, Piaya, Cansi (with batwan as souring ingredient), CocoKalamay, Bintos (corn-coconut passtry) originate from Negros Occidental, the Sugarlandia of this beautiful and exotically charming country.
Bacolod truly is a wonderful city with so much to offer, we agree. We really enjoyed exploring it, and the people we met were so friendly. Oh and the chicken inasal!! To die for 😋🤤 Thanks for watching and commenting, Reny!

I did have a good hunch you guys wouldn't pass up on Calea's. It's just too hard to ignore!
I agree with Chris that the mango barquillos is the tastiest and Steph with her remarks about the sans rival. It just feels like zoning in or/and out of food while eating those, and you've consumed an entire packet or slice before realizing it.
Negrenses like to eat piaya freshly toasted with some hot local coffee for afternoon merienda (snack), or anytime actually. I agree with them. It's simple and tasty food, and for me evokes happy memories.
I think it will take a day at a time to fully enjoy those Negrense goodies, like KBL, Cnasi, or even soup no.5 since they're so hearty and filling. Kudos to Chris for trying to figure out how the dish was named. I think it makes sense.
Soup No. 5 is also available in Binondo (Chinatown), and elsewhere, and it has became a sort of speciality because the main ingredient is not easily sourced. Most places serve it on specific time/days too.
The recipes sort of differ as well. I don't remember the dish having potatoes, carrots, or anatto elsewhere. Although, they might also incorporate the herbs or "sibot" as we locally call them. It makes me think that it's a Chinoy or Chinese-Filipino heritage or fusion dish.
I guess you guys will continue your gastronomic adventures on another country. Maybe I won't be as type-ative (talkative) by that time since alot of stuff would be new to me, but I am happy to tag along. I'll save the experience for later when time lends me the opportunity.

Hey Cris! Thanks so much for your message, so good to hear from you as always. You knew we'd make our way to Calea's 🤣 You really can't come to Bacolod without trying their cakes and they were all they were cracked up to be, we could have tried more but were so stuffed!
Funny you say that about the soup no.5, definitely a specialty and we've been trying to get it all over, we tried in Binondo but a lot of the typical places that used to sell it no longer do becuase it's expensive and too hard to source, so we were so happy to finally try it here in Bacolod.
We've still got a number of videos in the Philippines to share with you, so don't worry we aren't leaving the country yet! We are just starting to think ahead and plan where the next destination might be. As a mega Inasal fan, Id love to return to Bacolod and try that soup. I think that ingridient that makes it sour is something unique. But Im sure the best thing to enjoy is the Inasal.
The batuan used in the cansi soup is very unique, you're right Eduardo. It gives the soup such an interesting flavour, definitely something to try. Oh and yes the inasal!! That is something special all on it's own 😉 Thanks a lot for watching and commenting :)
The beef soup! I am not used to the sour taste of beef using the fruit shown in your video as I believe that is a local fruit. What we used here are either tamarind or guava. But that still looks delicious! 😩🤤
Yes batuan is a local fruit in this region, and really makes the cansi taste good😋 guava would be interesting to try!

K - kadios beans B - baboy (pork) L - langka (young jackfruit. They also use the batuan as a souring agent. But when complemented woth the kadios beans it takes on a different level of taste. Astonishing!😀

You have no idea about kansi... It only in Bacolod and iloilo.. the one ingredient is batwan that Batangas don't have..
soup number 5 uses genitals of horse or genitals of beef..they have differences, get your fact straight coz kansi uses large chunk of meat and also soup number 5 doesn’t use batuan as an ingredient.
That's not going to happen in Philippines. I mean that bulalo servings.

I've had bulalo in Tagaytay and cansi in Bacolod. They are quite different. And yes, they do come in large servings like those in the video.
