BACOLOD, PHILIPPINES - We are continuing with our food tour in Bacolod, Philippines, with another stunning dish that you have to eat when youâre there - cansi. Weâre going to see the full process and then go to eat one of the best meals Iâve ever had in the Philippines!
The Bacolod Food Hunters (bacolodfoodhunters.com/) - First of all a huge thank you to Martin and the team from The Bacolod Food Hunters for taking me around in Bacolod.
Eron's Cansi House (goo.gl/maps/XoLfE6gHKuEry8vX9)
Cansi is a dish that includes huge beef bones simmered for hours until all the flavor is released and combined with ginger and onions, green chilies, and a especially a local fruit called batwan fruit (garcinia binucao), which gives the soup its sour taste. Itâs really an amazing broth and so addictive as well. When they serve you cansi you can taste all the herbs and acidity which breaks down the richness of the meat. The flavor was incredible.
In addition to cansi, at Eronâs youâll find a full spread of local Filipino food which you can choose from. We enjoyed a variety of different dishes including local Bacolod seaweed, smashed eggplant, and some grilled pork belly.
It was a fantastic meal and something you canât miss when you visit Bacolod! Highly recommend Eron's Cansi House.

Filipinos love having friends from all over the world; its almost second nature to us to want to have friends who become the family we choose; especially if they are from a different place and culture.
Even 1% Filipino blood is already considered hella Filipino here.
I'm Indonesian but I love other Asian cultural, local dishes and food. Especially Filipino food and the friendly people, just so wonderful, and mr Mark never fails to brought to us such an amazing food adventure, the bestâ€

I love the lady in black shirt talks so eloquently. I wish she has her own food vlogs too! My father's side is from Iloilo which is relatively an Ilonggo decent. I learned to eat Cansi just a few years ago. Dinuguan Ilonggo is the best!!
I'm jealous of Mark not just because he can eat so much good food, but also he can keep himself so slim
Its probably because he can eat labuyo like its nothingđ
Oh my goodness, at the end of the video, I'm thinking exactly the same.
I've always wondered the same.
Its all the travelling he does
I think his secret is labuyo to maintain that.
I like the fact that now Mark has gone to the provinces of the country to try the various food.Every region has various types of native dishes and certainly distinct palette. Hope you enjoy your new food adventure Mark!
Definitely - his coverage of culinary cultures is very thorough, and it makes the watch so interesting!
On top of that which makes his trips very interesting is even though the urban city and rural provinces have the same dish, the prep can be different slightly to drastically with the result of a diversity of taste of the same food. I can see why Mark returns to the Philippines over and over.

Thank you for featuring Bacolod food. Watching your videos brings me back to my beloved city and made me miss my favorite inasal and cansi.
Mark is single-handedly making Bacolod into a real travel/food destination!! The food looks amazing in this episode and the last one!!
Bacolod/negros island is honestly atleast top 3 culinary spot in the country. Iâm glad itâs getting this much attenton.
Bacolod really is a top food destination in the Philippines. Only thing that Bacolod is rarely known for is seafood. They have seafood spots in Bacolod but nothing special to boast of.
Good to know!! Planning to visit Philippines this year. Iâll try to stop by!!
Growing up, not many people owned refrigerators ..housewives go to the market everyday to buy food for the day ,thats why freshness is key to a good dish..oftentimes condiments and sauces are used to enhance thw taste and not to mask or hide the quality of the meat..
Yeah Bacolod isnât s tourist spot like how it should be. The original chicken inasal and cansi alone are enough to staple it as a culinary destination.
Great restaurants, you can spend at least 3 days tasting all inasal restaurants and other restaurants with their own signature dishes.
Another AMAZING video, Mark! Also, I just gotta say I really LOVE the fact that Mark actually finishes all the food he orders, in a lot of other food videos you see CZcamsrs order a ton of food but you only ever actually see them eat a few bites, but with Mark you know that he's gonna actually gonna finish all the food or at very least eat a TON of it. You can really tell just how passionate he is about food and how thankful he is to do what he does.
So many other youtubers get a bit too big for there boots after reaching a certain level of success or don't look nearly as excited as they used to before getting big, but not Mark. In every single one of his videos you can easily tell he's genuinely thrilled to about all the food he gets to try and all the great places & people he gets to visit. Never lose that passion, Mark and Thank you for sharing all these amazing experiences with us!

Im a native of this place. Whenever Im home i try to eat Cansi but as much as possible in Sharyn's. We only go to Eron's if Sharyn's is either full or closed. Cansi is how exactly Mark would describe it. I think batwan is the key ingredient that changes the texture of the soup along its distinct sourness.
Sharyn's is overrated and has jacked up it's prices beyond reason. Nowadays, Eron's is better. The turo-turo makes it a homerun!
Sharynâs taste has dwindled slightly lately. But itâs still good.

Mark has an aversion towards sweet food. He may not like it as much.
One new thing I've learned today is Cansi is the Bacolod equivalent of the Southern Tagalog Bulalo, despite they're totally different dishes, they have one thing in common and it's the beef bones used in them.
There's a pretty huge difference between them: batwan (called binukaw in other islands). Cansi is meant to be sour. Bulalo is not. It's more like a mix between bulalo and sinigang.
@@AngryKittens kansi is not a type of soup that you can make it coz batwan is not available in other islands of ph. so I must say Cansi is a unique dish of Bacolod
@@ajy1980 Batwan (Scientific name: _Garcinia binucao_ ) is found ALL THROUGHOUT the Philippines. From Luzon to Mindanao.
It's known as binukaw (also spelled binucao/binukao) or bilukaw or kamangsi in Tagalog (where the scientific name is from), batuan or batwan in Visayan languages, buragris or maninela in Bikolano, balakut or balikot in Ilocano, ballok in Benguet Ifugao, haras in Panay, kandis in Palawan, kamurai or kulilem in Cagayan Province.
It's rare in the Tagalog regions today because of deforestation in the lowland areas, but it is absolutely not unique to Negros Island. It is used more commonly in Ilonggo dishes, however.
Binukaw is also one of the most common souring agents used in other dishes like Sinigang of the Tagalogs, the Linarang of Cebuanos. While in regions like Mindanao, it grows wild but is rarely used in cooking (citruses are preferred instead as a souring agent).
