That's the most classy torta I have ever seen in my life.

You just made things easier for me, for the longest time I was trying the Jacques Pepin version of French omelette with varied results.
Anne's omelette also looks good, kinda like what US restaurants serve as "western omelets" but usually no ham.
As for the tortang talong, I like it when my mom puts ground meat on it. Yours looks good and fancy too.
Erwan is really dedicated to each of his videos. There's always a research before doing the vids. Good work man!
