      @@alleosussquirt8041 If you can look past the roasting, which is just a comedic act, you can learn from both judges. They know what they are talking about. Plus, sortedfood is aware of this comedic style. If they are uncomfortable, they can choose other youtubers to collaborate with. Uncle Roger is not the only youtubers with millions of subscribers.

    I have to give props to both Jamie and Barry. Cooking for a Michelin star chef and someone who is known for picking apart the type of dishes you have to cook adds a whole new layer to difficulty. That you are willing to out yourselves out there and learn is entertaining yes but more so - admirable!

      I've been cooking for 30 years and still don't have the spine to take on Chinese, Japanese, Tai, Singaporian or Malaysian dishes! I really want to get to a point where I can travel and just learn from the experts in those countries.

      @@SheepdogSmokey Dude Chinese food isn't that hard. I a white guy from the deep south have learned to cook Chinese food well enough that Chinese friends have no complaints. It's easy just find a recipe from a chef from the region and follow it to a T then once you start understanding the flavor profiles you can work from there.

    I can’t imagine the pressure of cooking a type of cuisine that you’re unfamiliar with and then being judged by experts who have been eating it their whole lives! Kudos to the boys for taking on this challenge, taking the critiques well, and learning new things surrounding Singaporean/Malaysian cuisine!

      Yeah but we don't watch Sorted for MasterChef style stuff though, we watch it for 3 normal foodies and 2(/1) chef(s). All I got out of this was a michelin starred chef having not much to do in the process, not talking even a fraction as much as Uncle Roger, and everybody dreading when the duo would walk over and try to make some painfully forced joke out of it all.

    The combination of Liz and Uncle Roger was perfect. Liz has a genuine knowledge and expertise in the culinary industry but most specifically in her heritages’ dishes and the ingredients involved and Uncle Roger is a comedic genius with a natural camera presence by tapping into the stereotypes that he is proud of and has made a career from using those things to create an online personality with a large following and be comfortable enough to make jokes about those things and adopt these stereotypes which could be considered offensive and inappropriate in this day and age to provide humour and entertainment as well as having a decent level of knowledge in the kitchen as well. They’re a special guest combo that we didn’t know would ever happen but it is one that we needed after their chemistry together and with the guys took this video from a typically chaotic yet as normal entertaining video to a quality, energetic banger

      That and Liz knows Roger well enough to help keep him from wanting to give what-for to them too. Throwing out the rice cooker and using packet rice were two cardinal sins against Roger’s “rice purist” tendencies (you can see his pain).

      he is malaysian as I am. we have an incredible mix of food cultures in our country that goes back more than 600 years. everyone is a self-confessed food expert and a food critic. we will also travel long distances for something as simple our favourite breakfast. we also constantly debate about who has the best this or that.

If you realised Nigel was saying "malaysian" a lot but Singapore and Malaysia have vastly different interpretations on what each dish tastes like even with the shared base. Sambal also isn't something you can critique as every chef and household uses different recipes. Elizabeth was amazing, having Uncle Roger the character and not Nigel Ng the comedian was a poor choice imo

    As a Malaysian, I must say I'm impressed with Barry's & Jamie's first attempt in creating these dishes. I find the nasi lemak is the trickiest type of rice to cook, as the coconut milk(santan) gets burnt easily under fire, or it may stop the rice cooker from cooking leading to undercook rice. My family's trick is to steam the nasi lemak, which gives a more fluffy texture, and each grain of rice will not stick. Pickled vegetables to pair with nasi lemak is called Achar.
    As for laksa, personally it's a very subjective dish to judge, just because in Malaysia, each state will have their own method of cooking laksa. Uncle Roger is comparing it to laksa that has a layer of oil on top, I presume he's comparing it to Kuala Lumpur's style of laksa.
    All in all great job Sorted Food!!! Always love to watch kitchen gadget reviews & pretentious or not ingredient reviews from you guys!!! :D

      For the nasi lemak, I always just use the rice cooker, and once it's cooked, check the rice if it's undercooked, and if it it, press cook again.
      A rice cooker is brilliant in that it checks when the rice is done by checking the pot's temperature, which would be higher if no water is in it as water is a bad heat conductor. Although in the case of nasi lemak, the boiling point for the mixture might have changed due to using coconut milk, so the rice cooker might have turned itself off prematurely.

      @@anasazmi8554 It's not that water is a bad heat conductor but water boils at 100°C. As long as there's water you can be sure that it's not more than 100°C. Once all the water has converted to steam (steam is also 100°C) and the steam disperses in air the contents of the pot can go higher than 100°C. This is why you can boil water in a paper cup

      I think Macadamian nuts have become quite popular in Malaysia (but not as common due to how expensive it is). You can find it sold by common brands nut snacks in petrol stations, pretty common element/flavour for ‘premier’ but domestic brands ice creams, or even the most famous Macadamian nuts product in Malaysia, the White Chocolate & Macadamian nuts cake from Secret Recipe.

      Not really. Western people like to westernize Eastern food according to preference. Nothing wrong with that. But putting in too much gimmicks and changing too many things are known as trying too hard. When dish ruined or borderline become another kind of dish, critiques will come in. The water use to boil the chicken will often be use to cook the rice together with excess fats removed from the chicken prior cooking. With that you get a flavoured rice. We usually serve the chicken boneless so that the remaining carcass can be boiled into a light soup to be serve on the sides. On by the way, this dish does not originate from China. Its probably invented by poor chinese immigrant whose trying to maximise the use of ingredients.

    I fell in love with Liz at 12:40 when she said that usually the banana leaf is heated to make it more pliable and also adds to aroma of the dish. I am from interior Tamil Nadu in India and for all our long journeys we used to pack food in heated banana leaves. It tastes delicious!

    Tips for not over cooking the rice is to cook the coconut milk with pandan leave separately (with shallots, ginger, lemongrass and salt) until fragrance. Then put them in rice cooker.

    well, i think it's a bit of culture-shock, kinda, for the packet rice thing. i'm from indonesia, having freshly cooked rice is everything to us. where i'm from we can eat freshly made rice, sambal and salted fish, and call it a feast. bcs the simplicity of warm rice with those ingredients are what makes it so good. i can even eat three portion of just those three things alone in a single sitting.
    having packet rice is like having frozen fish that has been stored in a fridge for days and then cooked it. it's just not the same thing as having fresh ones from rice cooker. the taste is bleh. my mom would berate me if i ever have packet rice while knowing full-well i have rice cooker and can cook on my own.
