My favorite thing about this is that deep fried pizza with filling is an actual thing in Italy, as the guys even mention. This legitimately looked delicious af.

@@Hana_145 It's a great trick to get it to release more flavour into a sauce when you're only doing a rough chop (or none at all). It doesn't accomplish much that annihilating the basil in the blender wouldn't though.
I've noticed that. I'm going to have to give that a go the next time my son has a batch of fresh basil.

I'd love to see a Food Waste battle, with a badge for creative ways to use things most people would usually waste. A battle gives the boys time to research and prepare, which seems like it'd have more potential for interesting ideas than the relay.

I'll be honest, I'm an Italian who loves pizza and that pizza croquembouche looks insanely delicious and mad props to Mike for pulling it off. I'll definitely try to recreate it to impress relatives and friends!

so actually what jamie is doing is a popular thing throughout italy basically. they are called panzerotti: basically fried calzoni with various different kinds of fillings.
Although I missed Barry's creative chaos (that is sometimes genius!), I loved this episode and the sass that the guest judges brought! I also loved that, despite all of their criticisms for being non-traditional, they recognized the combination of creativity and execution at the end. I do think Mike deserved to win, but I also agree that it was VERY close. Amazing job, Jamie and Mike!!

Thoroughly thouroughly enjoyed everything about this video. Loved the concept of the hybrid foods idea (more please!), loved the guest judges, loved how serious the boys took the challenge, loved how real and honest it was and complete agree that Mike made a work of culinary art! Totally well deserved Mike!

I'm surprised he won just because of this. It's not really a croquembouche hybrid if there's no filling. All he did was make dough balls and pile them in a tower. Granted, all Jamie did was fry a calzone, but that had more creativity than Mike's imo.
Can you do a chef vs chef pass it on battle!? - Both chefs get the same amount of ingridients and 50 minutes - the catch is they get the first and last 10 minutes whilst the 3 normals get the 30 minutes in between for both chefs - try to create the best dish and use the normals best!
This is great. And to make it really fair, the normals aren't told whose dish they're working on. :D

Can we take a moment to appreciate that after a very rough early year, Mike has won 4 in a row? I'm not counting the Skills Challenge here cause that's kinda its own thing.

Poor Mike getting bullied all episode from all sides, but the judges made up for it with a very generous awards round. Really the best of both worlds!
not really generous he deserved it i mean so creative he should have had many badges already but the chef judge mike very diff i have noticed example that multitsking pass it on he made the entire dish but didn't get the badge and unsual pairing as well

So happy for Mike with this one! He was clearly nervous and hasn't had the best luck lately, but he pulled it off and made the guys eat their words (and his delicious pizza stack). I just love seeing when things work out.

Particularly for their dough since they use Caputo 00 flour (and a proper lack of sugar) you cannot bake it in a regular oven- it really won't brown properly below 450C- hence the hob and grill method. (I think I used those terms and that unit correctly, but be warned I speak `murican)

@@sther9608 cast iron is the way to go. Preheat it in your oven while you're prepping everything and it has a nice effect of the heat from the bottom.
I would do a battle with 3 cooks at the same time, and if an idea is rejected, just have that person come up with more ideas until one is good-enough to make it into the video.

I really really loved this episode--especially the guest chefs dropping a bunch of really useful tips throughout--please more like this!!! Also, it would be awesome to have more guest lessons to the normals in the studio from people teaching different types of global cuisine. As much as we love you, James and Ben, it would be awesome to learn home-cooking tips on making these recipes from the people who are from different countries.
love the duality- 1 was small pizza dough balls with toppings outside (croc) and the other was large pizza dough balls with toppings inside (doughnuts)

A few badge ideas. I don't know if they're logistically feasible (esp. right now) but still fun concepts.
Updated Classics Badge - Take a classic British recipe update it in some way. Maybe have them choose another badge they are also going for, so they have to add both components to the dish.
Audio Challenge Badge - Make a good dish without using your ears. This can be anything from earmuffs to headphones playing music. Could include some shenanigans with the observers having funny one-liners on signs, etc.
Kid’s Birthday Badge - The idea is to make something that is appealing and easily eatable by children, ideally will feed 30 children, without needing to be cut/etc by the adults. Ideally, get kids to actually do the judging.
Wine Pairing Badge - Make a dish designed to pair with a specific wine or liquor. The badge has to be for a good pairing between the two, and not just a good dish.
Silly Hats Badge - Who can cook the best meal while wearing a silly hat (that impedes cooking in a funny way, NOT an unsafe way).
Oh I love that Mike got two badges. That’s brilliant.
Those dishes already both look slamming, but, hear me out, imagine _combining them_ ... Like building that croquembouche but from Jamie's Pizzaballs (sorry, I can't call them Donuts, they don't have a hole in the middle😅) the flavours may have to be tweaked to fit together but I think it would be even more awesome xD

A non holey donut with a filling is a Berliner xDD (for Germans at least 🤭) we mostly only call Donuts those with a hole, and there are filled donuts that still have the hole, otherwise it's a Berliner for me (classic with a jam filling but can have anything else usually custardy), I have indeed not heard of malasadas but I guess now I have something to look up.

Pizza stones work, if you have enough thermal mass. The 3/8-inch (10-mm) thick things that are a 16-inch diameter disc. Don’t have much thermal mass. I have two pieces of soap stone about 1-1/4-inches (32-mm) thick, (they started as sink cutouts from a local shop that does stone counter tops). I have one on the top rack of the oven, and the other at the middle rack. They are cut to one inch less than the width and depth of oven, with leaves it about a half inch (12-mm) all around the edges. It take about an hour to preheat the oven fully to the 575F max of my oven. It is then a decent approximation of a pizza oven.
"Don't get a pizza stone" True! Get a baking steel instead. Something 1/4in or up to 1/2in thick, it holds SO MUCH heat that it won't lose it all when you put the pizza on. Also they don't shatter if sauce drips on them.

I'd like to point out that Jamie's dish A: isn't a donut, and B: is a fancier version of good ol' pepperoni bread roll (a staple snack of some parts of the US, including Pennsylvania)
Stuffed pizza balls with the sauce and a cheese dip on the side. So if there's someone at your shin dig that can't handle them everyone else just dips them in. Also gives the opportunity for different sauces and chesses.

When toasting pine nuts, I've learned to get my cast iron skillet (chosen for heat retention) screaming hot, I take it of the hob, pour in my pine nuts, constantly swirl the pine nuts around the pan, and dump them out when ready.
Both of those dishes looked so good! Mike, props to you for going WAY out of the box on that one! Fun idea, well executed. Plus you even earned an extra badge! Well, done indeed luv!
