Hi Sam, I hope that you are having a great Thanksgiving. I'm cooking a honey glazed ham today using a recipe that turned out good for me when I made it 5 years ago. I'm realizing what a bad recipe it is, how much she left out, I won't mention Laura Vitale's name but it sure left me longing for your excellent well thought out recipes. Your exact mileage may vary, and over time the sugar will begin to melt (you can usually toss them in sugar again to fix this). Mine typically last up to 3 days before weeping. I don’t recommend refrigerating as they start to weep much faster, nor do I recommend freezing.
I'm not really a big fan of making them in advance. They will start to weep, but how long that takes to occur depends on many things like temperature, humidity, etc. You can always re-toss them in sugar if it gets too bad. :)

Can you use this same process for berries and other fruit
This looks delicious, but I can only get dried cranberries. Can I rehydrate them by soaking and use instead of fresh cranberries?
I think you could rehydrate the cranberries and do it, but I'm not sure what that rehydration process looks like.
