The Pumpkin Cake.

This pumpkin cake is absolutely delicious, everyone will love it!

Recipe for 8 inch/20cm springform:
- 1 small pumpkin, you need 12 oz/340g shredded pumpkin
- 7 oz/200g flour
- 3 eggs
- 1 tablespoon vanilla sugar
- 2 teaspoons baking powder
- 1 teaspoon cinnamon
- 1/8 teaspoon cardamom powder
- 1/8 teaspoon clove powder
- 1/4 teaspoon ginger powder
- 6 oz/170g butter
- 2,6 oz/75g brown sugar
- 3,5 oz/100g sugar
For the frosting:
- 7 oz/200g full fat cream cheese
- 1 cup powdered sugar
- 2 tablespoons/30g butter
- Juice from 1 lime or half a lemon
- A handful or more roasted walnuts and pistachio
Bake in a preheated oven 347F/175C, mine was ready in 40 minutes. Always check in the middle with a toothpick, if your cake needs more or less! Chill the frosting in the fridge when ready. Let the cake cool down completely before you spread the frosting.
