  • In this video, I'll show you how to make delicious homemade mozzarella cheese in just a few minutes! With simple ingredients and easy steps, you'll have fresh, stretchy mozzarella ready to enjoy.     *Ingredients:*
    - 2 liters of milk
    - 1/4 cup white vinegar
    - Salt
    *Steps:*
    1. Heat 2 liters of milk to 45°C.
    2. Add 1/4 cup of white vinegar and stir well.
    3. Cover the pot and let it sit for 5 minutes.
    4. Observe the curdled milk and press the cheese to remove excess whey.
    5. Heat the whey again to 75°C and add salt.
    6. Return the cheese to the heated whey for 5-6 seconds.
    7. Knead gently and repeat the process 5 times.
    8. Divide the cheese into two parts and shape it.
    9. Place it in a bowl of ice water.
    10. After 10 minutes, your mozzarella is ready to eat!

      Burrata and mozzarella are similar but different. Mozzarella is a stretchy, kneaded cheese, while burrata has an outer shell of mozzarella filled with creamy stracciatella and cream.

      I usually store mozzarella in whey in the fridge for 2-3 days. However, I prefer using it fresh due to the simple process of making it.

      It depends on your taste. If you want richer cheese, use full-fat milk. However, the key is to use milk that is not pasteurized.

      Using raw milk is necessary for making mozzarella, but I heat it to 75°C to ensure safety and kill any harmful bacteria. This process, similar to pasteurization, involves heating the milk to 75°C and then cooling it down quickly. It helps preserve the beneficial qualities of raw milk while making it safe to consume.       @@MinaGreenKitchen Oh I'm so curious to hear/watch more! I thought heating to that temperature was all that constitutes pasteurisation.
      Is it about the higher quality of raw milk then vs what's found in box stores, or fat content, something like that?
