** What's with the necklaces?
Rex is a whiskey mooch. His necklace is a manifestation of pure glory - forged from the irradiated bones of eagles and wolves. Also a tube sock.

Daniel is a whiskey sommelier. His necklace is a token of his sommelier level, and he trains whiskey sommeliers at The Whisk(e)y Marketing School in Austin Texas.
**A Whisk(e)y school?
Yup. Here are a few things we believe.
** You don’t have to be a snob to appreciate and love great whiskey.
Whisky and Whiskey (it depends on where it’s from) have been an important part of cultures around the world from time immemorial. Whiskey is a part of the very fabric of Western society, and in most places, is as common and accessible as beer.
Like Jazz and wine, snobs have predictably hijacked whiskey appreciation, spoiling our natural, common connection with it and creating a false dichotomy of “good whiskey” and “bad whiskey.”
It’s time to break through the emotional bias with facts and science. That’s what this school is about.
** The only valid definition of “good” whiskey is “whiskey you like to drink.”
Learning how to share your love of whiskey in a way that connects people to the history and the story has more to do with public speaking and storytelling than it does with facts and tests.
The best way to learn about whiskey and share that love is to drink whiskey and talk about it with friends. Study the history, find the stories, and discover the culture and the methods that have been developed over hundreds of years. That’s what you’ll do when you attend The Whisk(e)y Marketing School.
** You don’t need a marketing degree to learn how to share your love of whiskey with the world.

Regardless the industry you're in, most people are clumsy and ineffective when it comes to "networking" because they ignore a very important rule - Relationship First, Business Second.

Daniel needs to add blending to the curriculum of the sommelier course. He's pretty freaking good at it. In fact, the new distillery should have a blend based on the best concoction from these episodes and name it #rexweek. Yes, hashtag is included.
According to the Whisk(e)y Academy website, blending is part of the curriculum for Sommelier Level 3 and 4. :-D

I'm still amazed at how Daniel manages to understand the composition of different whiskies. His palate power level is over 9000
I have a super sensitive sense of smell and it messes me up because of the acetone from the heads. I believe when they say green apple, they are picking up the remaining volatiles from the wide heads cuts in almost all commerical aged spirits.
I've struggled to make looser cuts for aging but I'm going to have to just do it.
Try white buffalo trace. It's awful

I know the whiskey tribe channel still tries to deliver the laugh and Briana is a great plus, but the old episodes are just so much better. Sorry but they are.

How can you hate Dalmore... They are great! The whisky is delicious and they are super nice...i spoke extensively on the dalmore facebook team and they are suuuper cool and friendly too!
jack canox I don't get it either. People complain about the chill filtering, coloring, and that it's only 40% ABV. But all that should really matter is if it tastes good. And Dalmore is delicious! If it tastes amazing, then the coloring and chill filtering should be irrelevant. I'll bet the average person couldn't even tell the difference BTW an uncolored, unfiltered, and 46%ABV Dalmore anyway.
Watching you two blend is super entertaining. Makes me excited to see what comes out of the distillery.

I feel like #RexWeek (#RexMonth) would be a great basis for a whisk(e)y club. You look at Daniel's recipes and everyone brings a bottle to contribute towards the blend.
You could call this club: "Whisky Stone Soup" (in honour of the classic folk tale).
Perhaps this is the true value of Whisk(e)y Stones?
You go into a Scotch club and ask for a glass of water. You pull out your own Glencairn, add a whisky stone, and wait for someone to come ask you about it. When someone finally questions you, tell them: "I'm making Whisky Stone Soup." Proceed to regale them with tales of this magical stone and how it can take plain water and turn it into the Aqua Vitae...in fact, it can make water into any high-end Scotch you want! Sprinkle a drop of water on the stone and start nosing it. "It's subtle...but what would make it so much better is if it had some Dalmore 12 to help season it." Wait for someone to provide said spirit. Continue in this fashion until you have assembled your Whisky Stone Soup.
Of course, you have to have the right audience for such a ploy, but a true Master Mooch Extraordinaire could pull it off, drink down the soup (without sharing), and convince everyone to try again because the recipe didn't quite work the first time.
I will still never understand why people sh*t on Dalmore. I understand that some are expensive, but they're still delightful

Without a doubt, for me, Rex Week/Month/Year/Decade has been great so far just so Daniel can pull of his impressive whiskey alchemy. He can blend a mimic of these whiskey's so fast with so little effort. Its a viable superpower. I mean I guess this is what the masters do at the actual distilleries, but I've never seen it before. I thought it would be way harder. Daniel's like the rat from Ratatouille, only with Scotch.
We better get a bourbon from Rex to see if Daniel can even surprise himself. I'm betting on him now.

Really, Rex isn't just doing US a public service by cajoling Daniel into creating Poor Man's Blends. He is actually doing this for Daniel's benefit. Level 4 Somm Certification is: Craft & Cocktail. It includes building upon the Somm 3 whisky blending.
We have seen Rex grow from a fledgling Level 5,000 Whisky Mooch (episode 28) to the Master Mooch Extraordinaire we all know and love today. Sadly, Daniel has stayed a Level 3 Whisky Somm. #RexWeek is really Rex's gift to Daniel. An opportunity for him to give the gift of learning.
He's helping Daniel study so he, too, can attain the next step in his whisky evolution.

It's not just the coloring and chill filtering. The bigger problem with Dalmore is the low ABV. I'm convinced Richard Patterson would bottle it at 35% if he was allowed to.
Dalmore 12 for instance has a beautiful nose, but the taste and finish can't cash that check. Watering Dalmore down is not doing it any favors combined with charging sky high luxury whiskey prices.

I'm starting to think we're going to have to see Daniel physically drag him out of the Vault by the end of the week. I think there's too much whiskey for the mooch to handle!!?!!
Patterson is an amazing blender, but he is going for market appeal, which means a bit watered down in a lot of cases. Also, the name requires that it is held in such regard as to appeal to the very wealthy, so you need the fancy bottle. That being said, Dalmore malt is amazing. I've had some independent bottling of Dalmore (I think basically sherry matured without knowing too many details) and it is a big characterful malt. It's almost depressing how it's being held hostage, not only in presentation but in price. Of course the same can be said of Mortlach and Macallan. :( But the best way to feel a whole lot better is to get hunting for one of the other distilleries that are still providing an amazing value (i.e. pretty much anything from Cambeltown, Old Pultaney, Compass Box, AnCnoc, Bunnahabhain (12 year especially), Aberlour, etc...). The poor man can be rich in experience!
