That looks amazing! I love watching your videos and I like how you keep it real as your cooking. Most people just seem to edit out those parts. I do have a question though. Once you add the sugar to the eggs, do you need to start whisking immediately to keep from scorching the eggs before cooking? I keep getting little bits of egg chunks that I have to strain out.
Thanks, Walter! I try to show the rough parts too because anything can happen in the kitchen even to a professional! As soon as you add the sugar to the eggs, whisk until there are no streaks of whites. It can sit for a few minutes at this moment but you must whisk constantly as soon as the bowl is over heat! For extra insurance, whisk the eggs before adding the sugar. The yolks are particularly sensitive to the sugar and the proteins will denature much faster when they are on their own (not mixed with the whites).
