I can't believe this is the PERFECT place to include a generous shake of cayenne, and it is absent.
Chipotle works as a substitute.

I have been using cocoa, cinnamon and cumin in my regular beef chili for ages. It’s the best!
Wow, this recipe was really greater than the sum of its parts! It was absolutely fantastic. I made it exactly as written except: (1) I used more turkey, half dark and have white, and I chopped it up very very fine - almost like ground turkey; (2) I used a cup of whole wheat orzo instead of white macaroni; and (3) I used more than a pinch of cinnamon - like 1/2 tsp. These modifications, especially 1 and 2, made the mouthfeel for this just absolutely fantastic and luxurious. The flavor profile of this was just amazing.
I prepared this recipe in November 2020 and came back here for a refresher. Every little thing you do is magic, Chef John. Everything just leads me to the stove to turn it on. Magic, magic, magic. E-oh oh. (Do you actually read these comments? Don’t type anything out. Just nod or shake your head no.)
I made this for lunch today... 5 stars! One of the best uses for left over turkey. This was awesome, my kids loved it too.

I made sure to have all of the ingredients on hand this year but we ate all of the turkey. Substituted ground venison and it still turned out wonderful. Thanks Chef and a belated Happy Thanksgiving!

Just made this recipe. Super! I used crushed red pepper because I didn’t have any chipotle powder. It has a bit of heat, but the cocoa and cinnamon are a nice touch. Thanks!

OK - this looks like a wonderful recipe. But my wife is making a turkey pot pie for dinner tonight, which will be different enough from the tryptophan coma from yesterday to still be a treat. (She makes a REALLY good crust with celery seeds, and I am looking forward to dinner tonight, despite eating an unhealthy amount of feast yesterday!) But if we STILL have more leftovers, this dish will be on the menu in a day or two. And indeed, I am a fan of the dark meat from turkey or chicken. Thanks, and thumbs up.
We fed are 2 small dogs turkey last night my friend, tryptophan knocked them out for the night, lol. Your wifes pot pie sounds delicious & i also prefer the dark meat from turkey or chicken. I can attest to the deliciousness of Turkey Chili Mac. My wife and I consider ourselves Food Wishers and take turns making Chef John recipes. My favorite is still parchment wrapped pork shoulder. I can make sandwiches and tacos for a week, for lunch at work. God bless.

Watching your videos with the fam is a fun evening activity. Today I made Chili mac for lunch with the last of our turkey. It was delicious! Changes: a full can of tomato sauce, a little less salt (because of Dad’s kidney) and northern beans instead of pinto. I also used a different pasta but it was similar to elbow. Thanks for the amazing meal!
Made this chili last night and just now polished the rest off, killer recipe Thanks Chef John. PS made it with turkey legs I BB-qed on a weber grill with kingsford and small amount of apple wood chips, chili came out outstanding.

Although I couldn't hear what you said at the end what with all the bowl moving around, *I can remark* that the saucer matched brilliantly with the table setting underneath.
Made this with stewed tomatoes since I don’t like heat and left out the chipotle because I didn’t have it but it still tasted absolutely amazing! I never would have thought to add the cocoa powder but it really makes rich and well rounded!

Hi Chef John! I just made this today. The only difference is, i added my leftover mac & cheese to it and it turn out delicious. I add cocoa to my chili anyway to give it richness and body. I'm also a chef and I've been following you for years!

I made this with some alterations last night. Mainly I used low-sodium ingredients, only used half an onion, and had black beans instead of pinto. It is quite tasty!

Thank you for a great use of left over turkey. In our case, it was a spatchcocked bird that had been slow cooked in hickory smoke, which coincidentally went magnificently in the Turkey Chili Mac.
Mine it a turkey casserole. And dollop bisquick over it spaced out too. they cook and rise and it’s like biscuits and you scoop out a biscuit and you get all the casseroles .. turkey casserole with onions and celery and carrots and peas and whatever other kind of vegetable you want to throw in . So good

My chili recipe includes brown sugar, cinnamon, and chopped dark chocolate. It's a must to balance the heat and spice.

I LIVE for the dark meat! Every Thanksgiving, I always go for a turkey leg. Even better if it's slathered in vindaloo sauce. The hotter, the better. And I have plenty of leftover turkey so this would make a good use for it.

Why would u want to hide dark meat? I’m not really used to eating turkey, but I’m assuming just like chicken, dark meat is the juiciest and most delicious?

You can also use instant coffee as a substitute for the cocoa.
Equally, you can use hedge trimmings as a substitute for the pasta.

Glad to see you using chipotle. I enjoy it so much more than Cheyenne. I buy dried chipotle peppers, the only thing is they aren't dry enough so I put them on a sheet pan low heat in the oven until all moisture is removed then grind it in the nutri bullet. I put that s---t on every thing.

The spice mix is basically the same thing as a mole mix like we make in mexico. It's Mexico's national dish! Chef john if you haven't made mole yet it's right up your alley.
