    What you eat at the start is Kaw Ji (Grilled Sticky Rice) We usually made it at when weather turn cold. traditionally, it's just grilled with salt. the version you eat is a cover with egg and yes it dry. more modern vesion of Kaw Ji they will grilled with egg multple time to make more softer texture and ferment the rice with coconut milk salt and sugar to make the rice moist and better taste. also Kaw Ji often eat with "Jeow Bong" - (Laotian chili dip) to uplifting the taste. Many vendor sale delicious Kaw Ji. So you can ask local where to find them.
    Fun fact, Maha Sarakham is well know for Province of Education because a lot of University and insitute. (for example Tony Jaa graduted here.) and in the past they only had one Nightclub.
    Fun fact II, I think it's an only province that no mountain.

    English lesson in reading Thai-English words#2 . All cities that have "K" for "ก" will actually be a hard "G" so Krabi is pronounced Grah-bee and Kalasin is Gala-sin , soon you'll be going to K(ข)hon K(ก)aen - Kawn-Gen . Paddy, keep it up, you are doing great!

BTW - got the new merch yesterday 2 T-shirts and a swim trunk. They are really nice and great quality.     For your information., mahasarakam is the second biggest educational city in Issan after kornkaen. There are two big universities and many colleges. The name Maha mean very big or great Sara mean knowledge and Karm means town or city. so mahararakarm means city of great knowledge

      My Girlfriend is just now moving from Pattaya to Sarakham , so hopefully I will soon be moving there as well. She is planning on opening a hair salon with her daughter. I am a stylist as well in California USA . Hopefully I'll join them soon. I'm really looking forward to living in Thailand. Best wishes

    I just returned from Buririam province ( my first trip) I was amazed with the ancient Khmer ruins of Prasit Phanom Rung, Prasit Muang Tam, and the serenity at Wat Khao Anghan (interesting history). In Buririam city, I was glad I stopped at the Botanical gardens next to the famous world class Buririam United Stadium and see the replica of a Khmer Prang ( castle) which gave me a better idea what the ancient temples would have looked like. You’ll need at least 3-4 days in Buririam province.

    Great vlog!
    Sorry you had bad experience with "grilled sticky rice." I had some in May & June. Also, had the black sticky rice. Loved them both but they were traditional squares, lightly crispy on outside, not too chewy.

    I now live in the Netherland. I miss my hometown a lot, And that's Kalasin. If you like Indian food, I recommend Bombay restaurant. At Boon Kwang Road, it's delicious and it's close to my house. Thank you for the wonderful clip.

    Amazing how you can have a spazzing back and ride a motorbike. Feel better soon. Even walk a long way after a few beers lol. You had me laughing with the water buffalo.     There is also Phu Wiang Dinosaur Museum one hour outside Khon Kaen… I think Khorat is littlbitt bigger than Khon Kaen. Udon Thani ,Ubon Ratchathani, Khon Kaen and Khorat are part of the "Big 4 of Isan".

    The dinosaurs museum is built on top of the acture excavation poit where they found the fossil. On the top of the hill where the temple is located the excavation ground where yiu can visit.

    I have to add that you were still revealing all the secrets of the North whilst getting through your recovery... as in... not many 😉 I am joking of course... this is the real Isaan though! It's a little bit like 'touring' around all the tourist attractions in Rutland and Bedfordshire in England or Idaho and Wyoming in the US! There are of course exceptions to the rule! Constructive and informative as always Paddy... thnks!

    Hi Paddy. I think you will find Nakhon Ratchasima ,(known locally as Korat ),is probably the biggest city in Isaan. It seemed to me to be way bigger to me when I was there. The city centre was more compact for sure.
    Get Dreamy checked out at a proper bike shop rather than a badly equipped cheapie shop. It will be worth the time and expense in the end. Small leaks invariably turn into big ones if left. You don't need to be stranded out in back roads of Isaan! Cheers

      Oh and this video was cool too. Maha and Khalasin, cool in their own way right. Gotta slow down and absorb the culture. I am spoiled with in-laws over there who look out for me when I visit. You know, avoiding scams and getting the best from Isaan. Again, great videos and Khon Kaen will be lovely.

    I was in Kalisin in 2011. Nice people. Kept getting stares from the kids. Not many white guys around I guess. Also, I mentioned before that there is a Dinasaure museum east of town in a national park. It is one of the best museums I have seen. Worth a visit.

    I live in Sahatsakhan....(north of Kalasin) right behind the hill with the Dinosaur museum. Just built a house there with my wife. Although working out of the country for now (Qatar), can't wait to get back to my new home. Was waiting for this episode. Love the show!

    Paddy you need to try the deep fried grasshoppers. Much better than the grilled rice. Playing with the water buffalo was differently next level. 555 You got your *Grove* back Paddy. Nice video.

      @@PaddyDoyle. , yes maybe next time take carrots, if they approach place them on the ground, you might have more of a chance to escape and not get mauled, but i noticed they are very inquisitive when they see the drone... they really look at it, probably deciding if it might be good eating or a threat... ;)

    Hahaha! I knew your exact reaction to that barbecued rice on a stick before you tried it. My first and only time trying it was the same. I think its "yuck" effect comes from it tasting so much less delicious than you expect when you see it on the grill.

    Paddy if you go to khon khaen the rember to see the temple with the big towet, after thsy go to a building very near and get some massage 2 hours isnt expensive.

    It's sticky rice coated with thin egg and grilled. It's called " khao ji " khao = rice , ji = grilled so it means grilled rice. It's easy cheap snack of Esan people.

    Aside from the. Iré famous Khmer Ruins, I. Khoh kae' South East there is a old Khmer site called Pheuai moi which no one visits. It is in the middle. I'd nowhere and is stunning
