  • I went to Jersey City, NJ to try Filipino Food. I tried goto for the first time. Goto is a Filipino rice porridge that has pork stomach (tripe), innards and sliced eggs. See my reaction as I try goto along with suman sa ibos for dessert. Jersey city has some of the best Filipino food around Manhattan and this does not disappoint. I also tried pork siopao (Filipino buns) and ube pandesal (purple yam bread) which were delicious! I enjoy the food of the Philippines and the great communities the search for it takes me to.

      @BeerusTv Agreed on this. I only just watch some tutorials in YT and after that, I usually tweak it using my own recipe or top it up with some additional spices that suites so in that way, the food can be more flavorful.

    Suman sa Ibos (the palm wrapping) is best dipped in muscovado or brown sugar or better yet, pair it with ripe sweet mango. Oh and coffee on the side.

      @@unculturedtravel Phils is one of the few countries that produce the 4 main coffee varieties of Arabica, Liberica, Excelsa and Robusta, altho 90% of coffee produced is Robusta. Arabica is mainly grown in the highlands of Luzon and cooler parts of Mindanao while Robusta thrives in the warmer lowlands. IMO, the single origin Sagada Arabica with its clean and fruity taste is the best coffee locally.

    Suman is usually wrapped in a coconut leaf and you are right that it should be dipped in something sweet like sugar. Here in the Philippines we usually eat it with ripe mangoes, or in my province a local chocolate drink we called tablea

    8:45 suman sa ibus is made out of sticky rice or glutinous rice cooked in coconut milk halfway then wrap it in coconut leaf then steamed, there's various way of eating it since it doesn't have added sweetener...commonly dip in sugar, you can dip it in coconut jam (we call it matamis na bao) or you can have it with sweet ripped manggo...in the southern part of the Philippines they eat it with what they call sikwate or hot think chocolate drink...9:45 its a filipino version of congee...we have two type of congee we have what we call arozcaldo and goto...arozcaldo is made with chicken while goto is made with pork intestine or tripe we eat it anytime of the day can be your normal meal such breakfast, lunch or dinner or have it as snack...

      @@unculturedtravel You can try searching for lomi (thick noodles with a "creamy" texture soup), la paz batchoy (egg noodles in a clear savory soup, almost like a ramen dish) and sopas (macaroni with a milk soup base).

    Siopao is eaten with sauce specific to siopao. It is a thick, sweet soy-based sauce almost similar taste to teriyaki sauce. siopao is also eaten piping hot. What you've eaten is baked siopao that's breaded. The more popular type is the steamed one wrapped in a bao bun. If you buy it again, ask for the siopao sauce. for goto, you put a few drops of fish sauce to add saltiness and unique umami flavor. It is calamansi that's normally used. Lemon has a totally different taste profile but I think calamansi is not readily available there. Calamansi is always the lime used for filipino dishes and is several times more flavorful than lemon or lime. Lemon/lime is just a substitute in absence of calamansi.

    Your instincts are right. We sometimes eat bread (like monay or pandesal) on the side and dunk it in the goto!
    We also pair monay or pandesal and butter with pancit - all carbs but it works.

    The siopao you ate was either baked or toasted, you just eat as it is.. Paos are usually eaten without sauces.. Filipinos love the addition of sauce because of the additional sweetness to it..

    For goto... I like to add a bit of ground pepper and fish sauce to taste. Also I like to add a little garlic-chilli oil in my goto but If you don't have one... Tabasco or Sriracha works just as well!

    You can cook rice simple,or sticky rice, or combo, fry little oil with ginger.. And add water to make, Congee. Garnish onion chives leaves

    To enjoy more how to eat suman (sticky rice wrapped in coconut leaves) is to dip it on sugar or you must have a choco espresso on the side .(Much better if you can find cocoa tablea ,it is a pure cacao,use as coco drinks ) We usually eat it for breakfast or afternoon snacks .. or dessert .
