Recipe
Ingredients
- 120g mayonnaise
- 1 tbsp Worcestershire sauce
- 1 tsp old bay seasoning
- Small handful parsley, chiffonade
- 1 tbsp chilli sauce of your choice
- 450g picked crab meat
- 1 egg
- 1/2 cup panko bread crumbs
- Salt to taste
- Oil for shallow frying
Method
1. Start by mixing the mayonnaise, Worcestershire sauce, old bay, parsley and chilli sauce.
2. In a separate bowl, mix the crab meat, egg, panko and salt.
3. Add the crab to the mayo and fold through, trying not to break up the crab meat anymore.
4. Roll this mix into 8 crab patties
5. In a skillet, add 1/2 cm of oil over med-high heat.
6. Pan fry the crab cakes until golden brown on both sides.
Ingredients Mayo
- 125ml olive oil
- 125ml grapeseed oil
- 1 tsp dijon mustard
- 2 egg yolk
- Juice of 1 large lemon
- 2 tbsp water
- Salt to taste
Method
1. Start by adding the oils, juice of 1/2 a lemon, egg yolk, 1 tbsp of water and the mustard to a tall glass or container.
2. Place your stick blender at the bottom of the container and turn it on. Slowly bring it to the top, being careful not to split the mayo.
3. Once you have emulsified all the oil into the yolks, check how thick it is, and if it's too thick, add the other tbsp of water.
4. Add a pinch of salt, blend once more and then check for seasoning, both salt and acidity. If it needs more acid, simply add the other half of the lemon.
Ingredients Tartare sauce
- 125ml mayonnaise
- 40g diced capers
- 40g diced shallots
- 40g diced cornichons
- Zest of half a lemon
- Small bunch of dill, finely cut
Method
1. Mix everything together and you're good to go! - Jak na to + styl
I grew up in Maryland, a US state known for its crab cakes and blue crabs. It's actually where the Old Bay spice blend comes from (It was originally made in Baltimore before McCormick acquired it). It's a huge part of our local culture and most of us tend to be purists who dislike excessive filler. As someone who is generally judgemental on this particular subject, I have to say you did a very good job. Props for making homemade mayo. It's such a simple thing and it does make a difference. I will preface the following suggestions by saying that not everyone in MD makes theirs exactly the same way and many people are super opinionated (and in some cases secretive) about their preferred recipe. With that in mind, here are a few differences in how many of us Marylanders approach ours:
-We use blue crabs which are smaller but have have an amazingly buttery and sweet flavor. This is a must. Fresh crabs (like you used) are best but if you are buying pre-picked crab meat the best is jumbo lump if you can afford it.
-We would definitely omit the chili paste. Truth be told though, chili paste in crab cakes sounds delicious.
-Many of us prefer to used crushed crackers (such as saltines) rather than prepackaged breadcrumbs. The crackers are less crunchy and have more flavor. If anyone wants to try this method, keep in mind that the crackers are salted and adjust your seasoning accordingly.
-We most commonly (but not always) bake ours instead of pan frying. We form them into a ball rather than a patty. Some folks brush theirs with a little butter before popping them in the oven.
-We tend to pair ours with some fresh squeezed lemon. Some folks do use tartar sauce or coctail sauce, but it really doesn't need it. In my opinion, the lemon adds a little acidity and brightness that doesn't distract from the crab, which is the main star of the show.
If you ever want to try making our style of crabcake I'd be really interested to see what you think. I'll admit that I'm biased when I say they're the best. Just be prepared... if you say its a "Maryland" crabcake you'll have a state full of Uncle-Roger-type personalities coming for you. I'm risking life and limb just by making this post. Jokes aside, love the channel and much respect. Cheers!
Did I just hear a "Hiaya" in the distance? 🙂
My bestie lives in MD and I agree, Marylanders know how to make crab cakes and red cream of crab soup. I also so the MD version of cream of crab soup too.
Andy, give it a try, but make sure it's an authentic MD crab cake
Yummy on the blue crabs. I’ve had them in Maryland (and have the mug to prove it;)) We have a Chinese restaurant here (nyc) that cooks up a whole mess of them then serves them up piled in the middle of the table with the various accoutrements to crack and pick away at them. So good .. We get gorgeous blue crab crab cakes locally here too. I do like to add a bit of fine diced hot pepper in my recipe - a habit I picked up from having delicious crab cakes in the Caribbean (they use a different crab though) cheers!
Maryland here too!
Mate I don't think it can be said enough how grea it is having you put Australia and NZ on the map when it comes to excellent quality food and cooking. Makes me so happy seeing you represent us and our awesome food culture. Would love to see you do a couple of brunch themed recipes because let's be honest, it's what we do best
Can you please, please tell me one thing. How do y’all say “started” and how did that become what it is?
NZ better
Andy is a national treasure. Protect him at all costs.🙂
Someone sponsor this man already.
Also Iain Hewitson
I just want to say thank you. Out of all the chefs I follow, you are the only one that gives gluten free alternatives. Its hugely appreciated. Most you-tube chefs don't take the time. Thank you.
Just picked up some Dungeness crab here in Northern California and making these tonight! Thanks!
Nice 👌
My wife and I went to Seattle for our honeymoon and had some fresh crab cakes and now they are my favorite treat. Can’t wait to try some at home

I'm from Baltimore and i shed a tear of joy when u used old bay seasoning
Should be used more 👌
Awww, the giggle always makes me giggle too. That’s real
Where I’m at it would be more cost effective to buy some Scuba gear and go and catch them myself.
Because you're an Australian, and most other parts of the world don't have the shore almost directly beside your residence
Bahahaha
@@amyb7509 still gold just show us a video
Unless you're from Maryland. Virginia may be for Lovers, but Maryland is for Crabs
East Coast Canada, cold ocean, no crab, West Coast Canada, Crab but no Lobster. No crab here and we love it
Friggin capers in the tartar sauce!!! How come I didn't think of that! Nice video as always!
Love your shorts first. Then discovered your channel. Heaven.

Another great video. Thanks Andy.

I absolutely love and enjoy crab cakes! THANK YOU for sharing
Cheers from Houston TX. We grew up making them with canned tuna and salmon but pretty much the same recipe. Love a good crab cake
Andy, that looks great and quite easy! I live on the US Gulf Coast where Blue Crabs are really plentiful & easy to catch. I can’t wait to give this a go!
Don't need to watch ramsay or other chefs , your videos are the best...greetings from Italy, ciao👋

Another well done and easy to follow video. Thanks Andy!
Glad you enjoyed it!
Thanks Andy for all of your good cooking mad love from Maryland home of the crab cake 😀
What a treat, thanx a lot!
So couple of tips to add if I may. Once you formed the crabcakes, put them onto cut pieces of parchment paper. This will help when picking them up. Also put them in the freezer for 20-30 mins before frying to firm them up.
gotta love how genuine you look when doing this
Present chef! Love these!
Nailed it Andy Excellent methods of breaking down this great recepie Outstanding fabulous cheers

So glad I found your channel mate, I don't have tick tock but the missus told about you and how you have a CZcams channel so I've hooked ever since
You are incredibly enjoyable to watch.
Thank you!
Yes! Thank you so much
My mouth is watering, Chef!
👌
Andy! Looks delicious, thanks for sharing! Peace ❤
Thanks Andy...from Vancouver!
On the west coast of Canada we'd use Dungeness crab, but it's expensive... a special occasion thing, unless you catch it yourself like my uncle does. When I don't want to "shell" out for crab, I've used basically the same method with a good quality canned salmon and they turn out fantastic. Comes together in 20 minutes, family loves them. Cheers!
One of my all time favorite recipes!!!
It's a good one 👌
Looks so wonderful!
Looks simple and delicious
Amazing Chef ! It looks so good. Love from Paris 🗼🗼🗼
Thank you!
Crab cakes are my favorite 😍
I live very close to the Eastern Shore of Maryland. To hear Old Bay in the recipe made my heart sing. Suffice it to say, any “ Good Ole Boy” raised on the Eastern Shore knows how to crack and clean a crab. Blue Crabs are smaller and sweeter than other crabs, oh are they good!
You have become my favorite CZcams chef. I would love to eat your food one day👍
Thank you!
Can't wait to try this recipe, I grew up in Maryland and make a pretty good crab cake, but yours looks really good to Andy
Thank you for the amazing recipe and tutorial.
That's only got feed me alone.

Hey Andy! Happy New Year!! I wish you all the best to you and your family! I love good crab cakes, and this recipe is definitely one I'll use! The crab cakes and sauce are a winner!!
its been 3 weeks since new year so kinda late for that, no?
@Duc Minh Nguyen It's never too late to send well wishes to anyone!
Another cracker chef! I'm off to Vietnam next week for a couple of months, will suggest something I find on my travels for you to replicate...
Happy new year to you and thanks for watching!
Nice, i'll be heading there later this year as well.
A master chef is a pleasure to watch
Looks good chef!
*Tasting through my TV and these are delicious 🦀🦀🦀*
Haha thanks!
Good
Looks great
Hi andy chef
.. I loved ur video, very nice 🥰🥰😘thank for sharing
Yum yum yum! those look delish! I loooove good crab cakes 🦀 (I love whole crabs too :)) (thanks to the reminder to add Worcestershire sauce to my shop list. I’ve been out for a bit and have been subbing a teeny bit of fish sauce for umami, but it’s not the same.)
Awesome cooking 😍😍
Ooooffff … lovely 👍🏻
Ooooooh, I love crab cakes!!!
Glad to see that you use Old Bay and pan fry the cakes! Never had mud crabs. We use blue crabs and crushed saltines instead of panko. BTW, a good crab cake doesn’t need a sauce 😮
Everything is better with sauce 😇
Love this video going to give it a run this coming week ... Glad I ask for this video.. Best cooking videos on UTUBE..
I love andys cooking. I hope one day he makes something creative, like orange chicken perhaps
Living in Oregon we are very spoiled with Dungeness crab. When i was younger we wouldtoss in the boat and crab a few times a season. So delicious.
Had some delicious crab cakes at Mo's on the river a few years back, and the best Tuna melt ever, can't wait to get back up there.
Over in UK they always add potato to the crab cakes and it makes it too stodgy but these look perfect!
Weird was just thinking i fancy crabcakes and wham there it is. Thx dude x
Read your mind
That looks good! As someone who lives in the United States it’s always been a dream of mine to visit Australia. I hear Australians know how to barbecue. I’d love to try a real authentic Aussie barbecue.
Coffee Stipend for Babe!!!
Thanks!
J'ai faim ! Je vais acheter du crabe 🦀 et de la mayo maison. Merci Andy tu es une légende
Enjoy 👌
Looks delicious sir 👍
The homemade mayo is the kicker in those cakes
I was on a Coast Guard buoy tender out of Astoria Oregon and we worked the buoys from the Canadian border down to the edge of California. We would anchor over the job site while the buoys were either replaced or refurbished on the spot. I built three Dungeness crab pots out of bread racks and put them over the side for the duration of our stay. I kept the large males and everything else went back in. I'd pick the crab meat and make either crab louies or cakes. Nothing beats fresh crab for quality of eating. Now that I live inland I use red king crab legs for cakes and they're superior, expensive, but superior. I have all-you-can-eat king crab parties with cakes and ice chest full of legs, drawn butter, corn on the cob, fresh made cole slaw, dessert, and ice cold beer and wine aplenty. You only live once so it's worth the cost. Eat, drink, and be merry because it's later than you think... I always say.
Hey Andy looks really yum. Please try Mutton Tikia Kebab also. You will love it.
Great video!
Thanks!
Superb chef...great content...

Crab cakes are one of those dishes that have so many variations but also all seem so good! Mine are completely different than this
Definitely many versions out there and they're all pretty delicious!
That looks super good! Though I question the taste of anyone who would put Rocket/Arugula on a plate.
Hey Andy. Can you please do plant balls like Ikea? They are so delicious
