Man that looks good. We are gonna have to try this recipe on some sausage soon. I tried some smoked deer sausage with pineapple and coarse turbinado brown sugar in it. Even my wife liked it and she’s pretty picky on sausage. I imagine pork will be even better.

I didn't even realize it was in there🤣🤣🤣. Well I grew up my Teenage years in Mobile. My Mother is from there, But I moved back home. Dad's bunch were not football fans, but the whole Mothers side were Bama fans. Couldn't just jump back to LSU after moving back to Louisiana at 17🤣

@@godscountryhuntingfishing1638 yeah you're right. Would you ever leave any of that sausage fresh? Or do you always smoke it? I keep my deer sausage fresh and love to make a gravy with it. I bet that sweetness from the pineapple with some non sweet sausage would make a hella good rice n gravy
@rickmelebeckjr we do pan sausage, and normally don't use pink salt in pan sausage. We eat it, use it in gravy, sausage Balls, and also in Cheese dip or Queso😉
@johnverdin6600 here's the thing, if it's link sausage in a casing, id probably do it the way it's done in factory, which is with cure salt. If not, you could end up slow cooking it on a smoker or something, or leave in fridge too long and end up with bacteria you don't want. That sausage with cure salt and vac sealed has like a 90 day shelf life in a fridge and will last a long time frozen. We've eaten it almost 2 years old out of the freezer. The cure salt is also part of the flavor of link sausage, smoked or not. Like I said before, we do NOT put cure salt in patty sausage at all though. Hopefully this answered your question

I like just original sausage, but I like being able to change it up. Pineapple Pepper jack is a good flavour!!

Never had wild hog sausage. Looks and sounds delicious!
It's good, but leaner than domestic. Better for you in a way, but if it's too lean you need fat back added to make real good sausage IMO

We do not use it on pan sausage. If it's going straight in the freezer we do not use pink salts
