    Looks Very good, I usually grind the Neck Meat up for Burgers and Tacos but that Roast looks great. I get very upset when Hunters only keep the Hams ,Shoulders, and Back Strap. I make use of every bit of Meat I can get from a Deer.

    I always harvest the neck and cook it whole. A couple of hints, if I may. Rougher cuts of wild game meat like the neck benefit from plenty of black pepper. I use McCormick's Smokehouse black pepper which has liquid smoke added. You may want to try some in your next dry rub. Also, cooking it for the length of time you did probably was sufficient, however the USDA states venison should be cooked to no less than 160 degrees, not 155. It's temperature that kills the bacteria, not just time so just a little more heat would probably be a good idea. Very nice video. Well done!

    quick suggestion... you should either get or make a primitive mortar and pestle for grinding up you spices for the rubs and such... of course you can do much much more with it, but they are pretty amazing.

    That looks delicious. Have you ever hunted moose/bison, and if so, then do you know of recipes for those? and do you ever use novelty arrowheads -like ones that function as a whistle/fishing hook/etc.?

    Great work! I like urging people to consider cooking the parts they usually throw away; properly prepared, even shin meat can be incredible! May I suggest you try smoking some of those tiny chile pequins? They would be like nuclear chipotles! They are tiny, so they won't take long...

    best I cooked was by accident. Had a hip of deer on a Weber charcoal bbq and the briquettes burnt out. I restarted it for about three more hours. Total about 5 to 6 hours and just like the best roast beef. At the family reunion no one knew what it was except those who asked.

      And not sure if it would apply here, but bone broths provide TON'S for minerals and nutrients that you would otherwise have to buy in a vitamin supplement. Save money. Live better.

      I've always found leaving the bone in increases the gameyness, if that's a word.

      Caleb, it is... well people use it anyway. Now, if you have eaten a lot of game you may not hold the opinion so strongly. I grew up on venison, so for me, it's just FLAVOR! I have never tied the connection between the bone and the flavor, it might be the fat or tendon hidden between the meat and bone. It does have a bit of a strong taste, but again, if used to it, it is not 'off putting'.
