That tray where you installed the water level switch is for when you sweep the cabin sole, you sweep all the dirt to that tray and then take it out to throw away..
A very cheap remote anchor drag alarm can be created with an old mobile phone and the 'Anchor Pro' app. The paid for version is cheap and, in my opinion, very good. If you also have Telegram installed on the phone, it can send you a Telegram message on your regular phone alerting you to drag. You can also interrogate from your onshore phone and boat's position. You would need to connect the onboard phone to a charger if away from more than half a day or so although this is not a problem for me as I'm not away from the boat for more than a few hours when I would want to know if my anchor is dragging. Of course this doesn't have all the other sensor functionality of the Roam device but anchor drag is the big one for me
Wouldn’t this old phone need to be connected to the cellular network either via starlink satellite or regular local or roaming cellular coverage in order to send you the telegram?

True, would need cellular coverage. I have that pretty well everywhere in Greece where I sail and I can get a SIM for $5/month
