    Holly's Challah:
    This challah is perfection: golden crusted with a light, airy crumb. My friend, Holly, learned this recipe from the wife of a rabbi, and one day she taught me how to make it. I am forever grateful, because it’s so delicious, so easy, and every time I make it, my children think I’m a hero. Also: It makes the BEST french toast.

    Alexandra I cannot thank you enough for this recipe. It launched my little home-based lockdown Bread business. I made my first one mid July 2020. I have tweaked since then, especially that I make two smaller straight ones from this recipe as one large one was doughy. I do the traditional six strand braid and I double the recipe regularly. I use brown sugar instead of honey - 1/3 cup. I usually make it Thursday night, knead quite a bit more than you do, rest half an hour and then do four envelope folds for good measure before putting it in the fridge about 8 to 10 hours.
    I have found a mix of bread and cake (all purpose) flour gives me the best results becase here in South Africa our flour protein levels are lower than in the rest of the world.
    Also the proof time after shaping differs every week and I don't have a temperature controlled home. I wait till they are marshmallow-y almost overproofed.
    I've also made Holly's babka and it's a dream!

    I tried this recipe and yes the kneading stage was easy and mess-free following your steps. Loved the taste and texture of the final product except I thought 10g salt would be a bit too heavy for my taste buds so I reduced mine to 8g. It was “saltier” than my other recipes for challah bread. Regardless thanks for sharing this wonderful recipe. I’ve loved your focaccia clip and made it so many times for family and friends. My son’s italian coached loved it too! A huge fan of your channel.

    Beautiful! Super relaxing to watch 10/10. would def try soon. Is it possible to double the portion to create 2 or will that mess up the recipe?

    Looks great. I don’t know if you can, but would you be able to include your ingredients in grams both here and on your website. I don’t get consistent results with cup measurements. Thanks and keep the videos coming 👍

    Hello. Is it possible to substitute honey with some other thing? I don't have easy access to honey. Thank you in advance. 😄

      I use this recipe every week and I use one third of a cup of light brown sugar in place of the quarter cup honey but you may need to increase the water by a tablespoon or two. In fact I have a friend who asked me to reduce the sugar so I know it also works with a quarter cup.
