Sweet Wild Rice With Apricots, Craisins, Raisins and Pecans | Vegan And Gluten-Free

  • Learn how to make this Sweet Rice Dish which features a mix of Wild Rice and White Rice, Pecans, Sautéed Onions, Apricots, Craisins, and Raisins. Great as a Thanksgiving side dish! Always a Crowd Pleaser! This Dish can be eaten Hot or as a Cold Salad.
    Ingredients: Yields 6-5 ounce Servings
    This recipe is meant to be eaten hot. If you wish to eat it cold, please substitute the quantity of liquid added to the White Rice.
    Everything else is the same
    Wild Rice
    1/2 Cup Wild Rice-- Rinsed
    1 Cup Apple Juice
    5 Cups of either Chicken Stock or Vegetable Stock
    You need to cook the wild rice until tender. It is possible that you may need to add some more stock or water as very often the liquid has evaporated and the rice is still hard. Add 2 Cups of either stock or water as needed until the rice is soft enough to eat. You may have to do this more than once
    White Rice
    3/4 Cup White Rice
    1 1/2 Cups of either Chicken Stock or Vegetable Stock
    (If you wish to eat this as a cold side dish, please add an additional 3/4 Cup stock)
    1/2 Cup Golden Raisins
    1/2 Cup Craisins ( Dried Sweetened Cranberries)
    1/2 Cup Apricots
    1/2 Cup of Chopped Onions- Sautéed until Caramelized (Brown)
    1/2 Cup Chopped Pecans
