    Thank you Lisa, as a new coookier and happen to live in 90% humidity, this information is invaluable! Great presentation and you answered all my questions.
    I'm also a canner and dehydrator so I have an Excalibur I use for many things, I just didn't know how important it was when working with cookies but it definitely makes sense!

    Thank you so much for this video! I live in Indonesia, a very hot & humid country. It usually takes 8 - 10 hours for my cookies to dry. I just bought a dehydrator today, and I'm glad I have chosen the right one based on this video. Though I feel like I should have bought the one with the cover that slide up, because I'm left handed. I bought the one that opens like your cosori, realizing to late that I cannot use my left hand freely. But that's okay, I just need to be more careful. Thank you :)

    Hi. I live in Hawaii and for years I’ve been baking little gingerbread houses for my little nieces and nephews to decorate. Some winters our air is very humid, especially during El Niño years and my gingerbread gets crumbly so what I have been doing is baking the gingerbread per the instructions and then let it bake in the oven at the lowest setting. I bake it until the gingerbread is crisp and all the moisture is out. My question is, would I be able to do this in a dehydrator so that I don’t have my oven on for such a long period of time?

    Wow so much good info. Thank you, really appreciated, I learned a lot. I do have a couple questions, if you could answer for me or guide me to your blog for answers, that would be great. I live in Hawaii, its always hot and humid so a dehydrator is on my list, but I thought butter melts at 92-95 degrees so that is a concern for me. Also I noticed how thick your cookies are, what is the measurement please and why did you choose that thickness? Total beginner here and so thankful for your expertise. Aloha

    I’m considering a dehydrator and I’m curious about the dual purpose of storage. Do you use it in the off mode to just store your cookies in a covered place? It seems like a great contraption Playa Del Rey storage too.

    • @BorderlandsBakery
      @BorderlandsBakery  Před rokem

      I do use it occasionally to let cookies dry fully after dehydration. I keep the door open to allow for airflow which is needed to dry icing through and to help it maintain its shine.

    • @BorderlandsBakery
      @BorderlandsBakery  Před 4 lety +1

      Hi there-- yes you can! Just make sure to keep the lid off for it to dry all the way if you want to keep it shiny-- the airflow is critical for that and if you turn it off too soon or leave it covered, the surface will dull :)

However, I do need to get the humidity out of the air and while running the ac is great for the summer, there will be a point when it won't turn on. At that point, is a dehydrator the only way to get the humidity out of the air? I live 8 miles from the ocean in Oceanside, Ca. (Just north of San Diego.)

    • @BorderlandsBakery
      @BorderlandsBakery  Před 4 lety +1

      There are a lot of different ways a cookie can "discolor"-- I would need a photo, more details, before determining what the issue is. My guess is that you're referring to butter bleed-- in which an analysis of your recipe and methods might be more appropriate :)

    Hi! I hope you are doing well, i have a question, I bought a dehydrator like yours. I used it yesterday for the first time, when i slowly took my cookies out i saw that some were smooth,but others were cracked and not dry.
    Am I supposed to put them in dehydrator as soon as they are flooded?
    Or do i wait for icing to set and settle first,then put in dehydrator?
    I am not sure why they cracked while in the dehydrator ☹️.

    • @BorderlandsBakery
      @BorderlandsBakery  Před 3 lety +1

      The cracking is usually from the cookies being moved prematurely or cookies sometimes settle after baking, causing the icing that hasn't fully dried yet to crack as it dries. Move them as little as possible. If the heat is too high, it can cause ripples in your icing (imagine drying it but also blowing air on it at the same time.)

    I have a dehydrator and I live in Illinois, so it's pretty dry already, but I got it to dry faster and with less cratering. The problem I run into every time is that the edges of my icing turns darker. Last time I made cookies I only put them in for 15 minutes at 95 degrees. I assume the discoloration is from them overdrying but do you have any suggestions for this? Less time? Should I leave the door open?

    • @BorderlandsBakery
      @BorderlandsBakery  Před 2 lety +1

      Never heard of this before so its interesting… what’re the ingredients in your dough?

    I have read of some ppl leaving the door open while dehydrating their cookies, is that necessary?

    • @BorderlandsBakery
      @BorderlandsBakery  Před 2 lety +1

    • @sarahdoerge1727
      @sarahdoerge1727 Před 4 lety

      Setting it at 95 is still too warm for the cookies and will dry them out. I get its all personal preference but I was curious what your thoughts were. Will definitely be using your tips moving forward ☺️

    • @BorderlandsBakery
      @BorderlandsBakery  Před 4 lety +2

      @@sarahdoerge1727 I believe setting it at 95 will NOT dry your cookies out DEPENDENT on how much moisture is in your cookie base and what you bake it at. It all makes a difference :)

    • @BorderlandsBakery
