Introduction
Traditionally, each component is cooked separately, then mixed together and slow-cooked to achieve a thick and luscious texture. The resulting interwoven or ‘laced’ consistency is Haleem’s distinguishing feature. A dish that will lighten your taste buds like none other. Chicken Haleem Ingredients -
150 gms Whole Wheat (soaked)
50 gms Barley (soaked)
1 litre Water
2 Bay Leaves
4 Garlic Cloves
1 Onion (finely chopped)
1 tsp Garam Masala
Salt (as per taste)
To Cook The Chicken
2 tbsp Oil
2 tbsp Ghee
1 tbsp Garlic Paste
1 tbsp Ginger Paste
1 tsp Turmeric Powder
1 tbsp Coriander Seeds Powder
1 tsp Cumin Seeds Powder
1 tbsp Red Chilli Powder
1 kg Chicken
5 gms Red Lentil (soaked)
5 gms Split Green Gram (soaked)
5 gms Split Pigeon Peas (soaked)
5 gms Split Black Lentil (soaked)
5 gms Split Bengal Gram (soaked)
5 gms Rice (soaked)
5 Green Chillies (chopped)
½ Cubeb Tailed Pepper (Kabab Chini Powder)
1 tsp Garam Masala
1 cup Fried Onions
1½ litre Water
Salt (as per taste)
Tempering for the Haleem
2 tbsp Ghee
1-inch Ginger (julienne)
5 Green Chillies (slit)
For Garnish
Fried Onions
Coriander Leaves (chopped)
Mint Leaves
Ginger (julienne)
1 Green Chilli
½ Lemon
Ingredients for the Garam Masala
2 tbsp Coriander seeds
1 tbsp Cumin seeds
1 tbsp Caraway seeds
1 tbsp Black Cumin
1 Bay leaf
2" Cinnamon
1 Black Cardamom
4 Cloves
4 Green Cardamoms
1 tbsp Fennel
20 Red Chillies
Salt to taste

Haleem is a type of stew popular in the Middle East, Central Asia, the Indian subcontinent. Although the dish varies from region to region, it optionally includes wheat or barley, meat and lentils. Popular variations include keşkek in Turkey, Iran, Afghanistan, Tajikistan, Uzbekistan, Azerbaijan, and northern Iraq; hareesa in the Arab world and Armenia; Dalim in Bangladesh and West Bengal, India; khichra in Pakistan and India. Haleem is made of 4 main components, Grain, Meat, Spices and Cooking liquid: either water, milk, or a broth. This dish is slow cooked for seven to eight hours and then vigorously stirred or beaten with a pestle-like stirring stick. I loved your serving bowl !!
Made this yesterday, it was really good ! I'm so slow in the kitchen so it took me several hours but I'm happy with the results ! My pressure cooker is the type that doesn't whistle but just blow the vapor during the whole process, so 1L of water for the barley and wheat was not enough even if I've cooked it only for 1 hour as I can't count the whistle. At the end it was dry and the bottom was burnt but it was still so good, I just scrap the part which was not in the bottom. Thank you so much for the recipe !

I did not understand the part where Smita mam said to cook the wheat and barley for another 1 hr after the 4-5 whistles.

The final process after debone the chicken. It has to keep mashed by some utensil. Haleem is like jaggery but this is like methi chaman kinda cuisine.

I always like your recipes. But this seems to be too complicated. It is more like dal gosht with addition of wheat and barley.
Can we take just chicken kheema instead of doing with chicken and then debonning them? Kindly reply if possible.
I am pretty sure Cubeb Tailed Pepper (Kabab Chini Powder) is also known as Allspice.
They are not the same spice. Allspice is also known as Jamaican pepper and tastes like a mix between nutmeg and clove.
Cubeb pepper tastes like a more aromatic and slightly bitter black pepper

I don't know how you always manage to mess up hyderabadi food, even tho it's simple to prepare.
In a video earlier you added potato in hyderabadi biryani, which is like the worst kind.
No Haleem in hyderabad is found red, Cubeb Chini isn't powdered and in this video all you have managed to do is cook chicken curry and add lentils to it, that shit ain't Haleem, not atleast for a million years.
Stop ruining Hyderabadi food, please do your homework before doing something.

I second that! Haleem is an ultimate dish. I have tried in Karim's and in Hyderabad. This recipe is totally disgusting. The color, the texture is completely different! No idea what she cooked but definitely it's not haleem. This Chef follows her own recipe! I personally believe Varun Inamdar is the best chef on Get Curried.
