How to make Russian buttercream|Smooth chocolate condensed milk buttercream

    Recipe details for the buttercream
    Chocolate Russian buttercream, also known as chocolate, condensed milk buttercream;
    Ingredients
    480 grams cold condensed milk
    600 gram unsalted butter(slightly firm)
    70g cocoa powder
    1/2 teaspoon baking soda
    35mls warm water
    Pinch of salt
    Vanilla extract
    50g icing sugar
    Process:Unlike most buttercream recipes that require butter to be used at room temperature Russian buttercream requires the butter to be slightly cold and firm,hence cut your butter into pieces and leave in the fridge until ready to use, on a warm day bring out butter perhaps 20mins to half and hour before use,or press your thumb or index finger into the block of butter with some pressure which should leave a hollow dentin the butter, thats the butter needed,firm and slightly cold but not too cold.
    1.Whip the butter in a stand mixer on high speed for 5 minutes, stop at 3 mins to scrap the bowl in for a uniform mix.
    2.After 5 minutes the butter should be pale looking,very different in consistency and appearance to the yellow cubes initially used, whisk for another 3-5 minutes and observe the butter looking so soft it slides off the spatula when a portion is picked up.
    3.Add the condensed milk and whisk for another 5 minutes on high speed. at any stage within this time mark add a pinch of salt,50g icing sugar and vanilla.
    4.Observe the buttercream come together after 5 minutes which should look smooth.The first phase of Russian buttercream is done.
    To make it into a smooth chocolate buttercream,(In a separate bowl add the cocoa powder +hot boiling water and baking soda and mix into a paste,this is to be done earlier before making the buttercream so it can cool down)
    5.Add the paste into the buttercream and cream with paddle attachment on slow speed for 3-5 minutes and thats a smooth buttercream with less sugar and good mouth feel done!!
