  • The original Abbey of Hautvillers was built by Benedictine monks in the middle of the 7th century. Dom Pérignon was cellarer at Hautvillers from 1668 to 1715. Pérignon came up with sparkling Champagne purely by accident. He was storing Abbey`s wine in bottles to slow the process of oxidation. First bubbles of Champagne were a result of carbon dioxide gas that formed as a result of the second fermentation. Nowadays Hautvillers is known as “the birthplace of champagne”.
