I leave them to proof at room temperature, preferably 25-27°C.

How to make glaze?
Put 100 g of powdered sugar (or sugar) and 100 g of water in a saucepan, cook over low heat until the sugar is completely melted, skim off the scum, let cool and cover with a lid for later use.
