  • Welcome to Dr. Anza's Cuisine! 🍛 Today, we're diving into the delicious world of Malai Boti Biryani, a unique twist on the classic biryani that combines tender, creamy chicken with aromatic basmati rice. This rich and flavorful dish is perfect for family dinners, festive occasions, or any time you want to treat yourself to something special.
    Ingredients:
    1kgg boneless chicken
    1.5 cup yogurt
    1 cup fresh cream
    1 tbsp ginger-garlic paste
    2 tbsp lemon juice
    2 green chilies, chopped
    1/2 tsp garam masala powder
    1 tsp Salt
    1tsp crushed red chillies
    1 tsp coriander powder
    Garam masala sabit
    4 cups basmati rice
    Cardimom 3
    Star anise 2
    1/4 cup cooking oil
    Fresh coriander and mint leaves for garnish
    Saffron strands soaked in warm milk (optional)
    Fried onions for garnish
    Instructions:
    Marinate the Chicken:
    In a bowl, mix yogurt, fresh cream, ginger-garlic paste, lemon juice, green chilies, garam masala, turmeric powder, red chili powder, and salt. Add the chicken pieces and mix well. Let it marinate for at least 2 hours or overnight for best results.
    Cook the Chicken:
    Heat oil in a pan and sauté the sliced onions until golden brown. Add the chopped tomatoes and cook until they turn soft. Add the marinated chicken and cook until the chicken is tender and the oil separates from the masala.
    Prepare the Rice:
    Boil the basmati rice in plenty of water with a little salt until it's 70% cooked. Drain and set aside.
    Layering the Biryani:
    In a large pot, layer half of the partially cooked rice. Add a layer of the cooked chicken with its gravy. Add the remaining rice on top. Drizzle the saffron milk (if using) over the rice and sprinkle with fresh coriander and mint leaves.
    Dum Cooking:
    Cover the pot with a tight-fitting lid or seal with aluminum foil. Cook on low heat for about 20-25 minutes until the rice is fully cooked and the flavors are well combined.
