Scaloppine Pizzaiola - A Very Simple and Quick Recipe by Acquolina in Bocca

  • Scaloppine alla Pizzaiola: A rediscovered dish from my mother's recipes, back when she worked at the famous gastronomy in Milan (check out my introduction!). I recreated it with great pleasure!
    It doesn't require much attention, just a good tomato sauce and a big appetite, hehe.
    Enjoy the recipe, everyone!
    Ingredients:
    About 200g chicken breasts
    Flour as needed
    1 garlic clove
    4 tablespoons of tomato pulp
    250ml broth
    Extra virgin olive oil as needed
    Salt to taste
    Pepper to taste
    Plenty of oregano
    White wine
    Instructions:
    Prepare a pan with a little oil and the garlic clove.
    Remove the garlic as soon as it turns golden. Flour the chicken breasts, place them in the pan, and add a little salt and a grind of black pepper. Sauté on both sides and add a little more salt to the other side (but don’t overdo it because we’ll be using broth too!). Then, deglaze with white wine. Wait for the alcohol to evaporate and add a bit of broth, 4 tablespoons of tomato pulp, plenty of oregano, and another splash of broth. Mix well, and as soon as the sauce starts to boil, lower the heat to minimum and cover with a lid. Let it cook for about 5 minutes.
    At the end of cooking, taste and adjust the salt if needed.
    One last recommendation: Get 1 kg of bread ready because in this recipe, doing the "scarpetta" (sopping up the sauce with bread) is a must!!
