    Jay as a young man my eyes were open to the creatures of the sea by a French film maker Jacques Cousteau.
    You Jay have re-opened my eyes again to the various species that inhabit the foreshore.
    I bet most of your followers looked at the sea as somewhere to swim while on holiday, now those loyal followers will be doing a bit of foraging trying to find those creatures that Smash showed us, and will be so pleased when they do.
    Don’t change anything Jay, these vids are an amazing insight into what’s below the surface.
    Ps the cook up looked fantastic as well.

    Yet another superb video featuring my favourite creature (cuttlefish) they are so cute. Nice lot of lobsters with eggs looks good for the future and that large squid was amazing. I quite understand why you love coastal foraging, especially at night. Thanks for posting.

    Great foraging vid - and great knowledge - really enjoyed this thanks. Just a tiny tip for cooking - each year we cook up cuttle and learn't that tempora batter is great made with fridge cold fizzy drink - beer, soda water - must be fizzy and very cold. Never use egg - just a simple runnyish batter mix with plain flour and the fizzy drink. Must first of all roll the cuttle/ squid in seasoned flour which helps the tempora to stick - then dip in the tempora and straight into the hot fat.

    Flour, egg wash and Japanese Panko breadcrumbs and shallow fry!

    A way to make the squid more crispy is to use a 50-50 ratio of flour to corn starch when you coat instead of all flour.

    Use half corn flour to self raising flour it will turn out alot crisper also the baking powder in the flour will help with the crispy texture 😉

      Lol @@SMASHFISHING wasn't going to mention that, however Hell Yeah! sure does burn and stink the place out.
      You Should get a bottle of sweet chilli sauce from Paradise farm aka Guensey Chilli Farm it's located on the north part of the island, would prob be a great local made product to go with the squid etc. The underwater shots are a great aspect to Dude.

    For tougher squid freezing it before you cook it then defrosting it helps break down a lot of the proteins, love the channel bud. Also with you oil, sesame is great for flavour, but it dont get as hot, peanut oil or something will crisp it up better =]

    Using the steak tenderising hammer was a neat trick! I watch a lot of Japanese sashimi and sushi videos, and the chefs there achieve a similar effect by cutting almost through the squid on both sides. They cut in a very small cross-hatch pattern, very time consuming, but it generates the same effect. Loved the 'Sea-same' oil, too!

    Heads up: Pink, organic Himalayan salt is far superior to sea salt, not only does it contain more minerals, but it is almost free of contaminants, since it is harvested in the pristine Himalayans, the same cannot be said for sea salt. The oil you used you called it sea same oil, it is actually se sa me, which comes from the seed that carries the same name =)

    Hey mate for those big squid.. u need to soak it with hot boiled water.. its take about 10-15 second.. the u fried it with flour.. for nextime you catch please try it.. TQ from Malaysia..

    Try batter them in very fine beadcrumbs next time. You can get em from Tesco for like a quid. that make it so crispy from the out and juicy inside!. But this technique requies using an bitten egg to get this breadcrumbs stick to something, and egg make it perfect glue for little breadcrumbs. Also this goes to plain flour first. So: flour, egg, breadcrumbs bish bash bosh on the pan. Mmmmm so yummy it makes me hungry straight away.

    Hey jay you need to get hold of a finer flour made by “Green Dragon” its used especially really for crispy coating by the Chinese, etc. Try it from Amazon or EBay

    Try some Panko bread crumbs Jay. It fries up crisper. Or crushed corn flakes. I sauté fish fillet breaded in corn flakes and its great. Don't know if sautéing would do it for squid.

    I see the other comments and will just say you still did good. If you found it tasty. Go for it. Canola oil is probably the cheapest to use and have no smell or taste as olive oil can have.
    Perhaps next time try to overdo fresh cracked pepper. Like really overdo it. It is so tasty and hot as chili.

      @@SMASHFISHING It's got a low smoke point and quite a strong flavour. It's normally added to chinese food in small amounts at the end of cooking for flavour. I was screaming in my head "WTF are you doing you numpty"

      Hey smash nice vid but next time use a peanut oil or a veg oil as that oil is for dressings not frying it quiet a strong oil that does not take well to high temperature

      Bull shit ! ...Sesame oil is one of the main frying oils used in Chinese cooking it imparts that wonderfull flavour we are all used to in their cooking , along with groundout oil (peanut oil ) ! .

    if you coated the squid in a 50/50 cornflour/rice flour mix you would of got a better crispness on it, for future reference.
    or as you say a tempura batter might work better.
    I would also advise cutting the squid into strips once its been tenderised, so you get fries essentially, that works really well if you dont want chewy squid.

    Sesame oil and chilly oil are dressings don't fry in them. Use grounding, veg or sunflower for frying.

    You make me wish I could do that foraging again - I did some many years ago, mainly on the East coast of England, but always a trip to reach the coast, so somewhat irregularly. Now I wish I had done more, as I can only do it virtually by joining you online - can't really do much of that sort of thing from a wheelchair. A few rod fishing sites are accessible, but I'd still have a fair trip to reach them.
