I agree, it's not great to watch a video tutorial that doesn't tell you how many stitches to start with. That's the most important thing to know when starting a project! 👍
You can easily look up blanket sizes and how many stitches are necessary to make a carriage blanket, crib bladder, toddler size or receiving size. It also depends what yarn you are using, ie light worsted #3 or worsted #4. So if they say use an even number of stitches and depending on what size blanket you want to make, you work the stitches accordingly. On the label of each yarn, it says how many stitches worked equal how many inches.

The simplest way, in my opinion, is to change it each two rows, so that when you come back, you simply pull up the yarn of the other color without cutting it. I love your channel, but I am very new to crochet. I wish you would post how many chains you skip when you make a turn.
If you look closely you will see how many she skips and she usually shows like for row 2 skip went right into first chain because it will be a single crochet. She is using SC so there is no skipping stitches at turn.
