INGREDIENTS:
Dough
• 1 ½ cups all-purpose flour
• 2 tablespoons granulated sugar
• ¾ teaspoons kosher salt
• 8 tablespoons cold unsalted butter, cut into 1-inch cubes
• 3 tablespoons vegetable shortening
• 4 to 5 tablespoons ice water
Filling
• 1 ½ pounds ripe plums
• 2 tablespoons honey
• 1 teaspoon lemon juice
• 1 teaspoon cornstarch
• ¼ teaspoon cardamom
• 1/8 teaspoon kosher salt
• 1/3 cup gingersnap crumbs (or graham cracker crumbs)
• 1 ½ tablespoons raw sugar

I would definitely want to make this for my wife. I have a question, when you cool it off.. do you have cool it on the baking sheet or can it be cooled on the meshed cooking sheet so the bottom of the galette cool more. Thank you for the recipe ☺
I'd definitely let it cool on the baking sheet first! That'll help prevent it from breaking apart as you move it.
