  • Delicious warm or chilled, this pie can easily be enjoyed any time of the year. The pear slices in this pie release flavorful juices that mingle with the spices, lemon juice, and bourbon added to the fruit to create a delicious filling. Cinnamon is the traditional spice used in this fruit pie, but cardamom is called for to provide an exotic flavor to support the familiar taste of cinnamon and pear. A tablespoon of bourbon provides subtle flavor and the long bake time brings the filling to a boil, allowing the alcohol to cook out of the pie.
    INGREDIENTS:
    • 1 Double-Crust Pie Pastry
    • ½ cup sugar
    • ¼ cup all-purpose flour
    • 1 tablespoon instant tapioca
    • ¼ teaspoon cinnamon
    • 1/8 teaspoon ground cardamom
    • 3.5 pounds Bosc pears, peeled and cored
    • 2 tablespoons lemon juice
    • 1 tablespoon bourbon
    • 1 egg yolk
    • 1 teaspoon water
    • 1 ½ tablespoons raw sugar

    I love this! I would not have thought to blind bake the bottom. I will try that. Bourbon sounds heavenly. I'm sure dark rum would be great too. I'd LOVE to add rum soaked currants but people can be fuss. Thank you for your lovely presentation!

    I love that I found a pear pie recipe. I love that the recipe is in the description. I do not love no oven temp given. Seems like 350f would work at 90 mins bake, 3 hr cool before slicing

    I’ve got 50lbs of pears from my pear tree and have been wondering what to do with them. Is it better for the pears to be slightly under ripe and firm?

      When it comes to baking with pears you want to use pears that are only slightly ripe. Definitely not too squishy but not overly firm either! Ideally you want pears that have just begun to ripen. Happy baking! 😊

      Omg me too! We just bought our home and it has a pear tree. Wow! So many pears! And ants… mice, rabbits, opossums, raccoons, lol! But fun!

      I have a pear tree too I do à lot of pear butter very easy to make and I put it in mason jars and use it trough the rest of the year it's very popular among my friends and family I also do pear flans, and pear soufflés

    Hi! I was wondering if I could sub the bourbon? Or not use it because I'm underage and can't purchase it ,as well as the tapioca,I can just use normal tapioca right?

      1 1/2 to 2 teaspoons of vanilla extract can replace bourbon. Or, white grape juice, apple cider or apple juice, diluted peach or apricot syrups!

    It looks and sound deliciouss, is that all one tablespoon of bourbon I'd rather double or triple it or more maybe a bottle lol, does it matter about amount of or brand or just any Bourbons okay is it okay to use more cinnamon or nutmeg or in more of other seasoning to make it stronger, thank you for responding whenever you have time

      I baked at 350 for 90 minutes and it turned out beautifully.

      I tried baking it like an apple pie. I use an egg wash with just the egg white on the bottom crust. This prevents it from getting soggy from the moisture of the pears.@@stevieray7203

    Double crust pie dough recipe is MIA? And apparently the temperature of the oven is somewhere between 50 degrees F and 50000 degrees F, but is kept secret??? Funny!
