    I came over from That 1870's Homestead and she said you were great. I just watched you and I really like your honesty and your do's and don'ts'. I grew green beans, canned 119 pints jars and was very proud of myself until I re-read the instructions. I only pressured canned for 10 minutes. I had to toss all 119 jars out and I still have not grown any green beans and that was 10 years ago. Thank you for sharing.

    I came over from Mouse Toes and I'm really glad I did. I feel a binge watch coming on. Thanks for doing reviving this collaboration. Take your pinto beans, drain them off and add them to your taco meat. I've left them as they are and I've smashed them. It's a great meat stretcher and you are using up you beans.

    I laughed so hard when you talked about swiss chard! with you on pickles; when we came back from Spain where for 2.5 years I did not get ONE pickle spear with a sandwich I went hella crazy canning pickles. Took us 4 years to eat them all and Vern would say " oh a pickle spear with beef stroganoff; OK" . GREAT tips on how to use your jars for different meals too.

      That’s great! I’m putting a quilt together right now… of 12 inch Ohio stars. They were orphan blocks [20] that were hand pieced and hand sewn together that I bought at a Salvation Army fabric sale. I cut more blocks to make a good size quilt and I’m putting them on point.

    It is so much fun to hear how one person loves canning a particular thing while it ends up on the never again list of another canner.
    I have also abandoned dill pickles, preferring to put up relish which I use more often.
    I love canned pumpkin. I agree there is work involved but pumpkin is so readily available that I don't fret over waste when I am pealing it. The rind, and guts I trim away go in my worm bin and are turned into fertilizer before I know it. I've trained myself to think ahead and puree and drain a jar of pumpkin the day before baking with it. Any leftover puree is added to my collie's dog dish, she likes it and I understand its very good for their digestive system.

    Sweet and sour sauce? Yum! The chard looks difficult…but if your hubby loves it, that’s super sweet to make it! I need to try your French onion soup. Happy canning!

    we quarter the pumpkins and throw them into the oven in a roasting pan. once cooled scrape out the flesh. It's now sweet. fill your jars and pressure can. great for a side instead of mashed potatoes or for tarts and pies. much easier than peeling and blanching. And you might want to try the no soak method for canning beans. they don't get as mushy. I agree though that small batch cooking for beans works also. And I agree with the peppers. you can throw frozen peppers in a fry pan and you'd never tell them from fresh some things are not can-able. lol that's why these types of videos are helpful

    Beans! Potatoes! Meat! Stocks! Things I won't be canning again, hamburger, fruits because i can't have sugar. I will make for gifts. I agree with you on bell peppers. I throw them in my bread dough, drained first. I can't waste things!

    Here's a few tricks for crisp pickles: add horseradish leaves or grape leaves, make sure you start with crisp cucumbers, and the best tip, let your brine cool before pouring over your pickles. There's enough acid in the vinegar to kill everything.

    I used to can. I'm almost 77 years old, and I loved the pretty glass jars showing my harvest I worked so hard to put up. Now I freeze most foods. One thing I wouldn't can anymore when I did is ketchup. It took a lot of tomatoes to get a decent amount of ketchup. 🙄🤨😁

      Ketchup is a lot of work. My husband made me a electric pot stirrer so I can make it with less effort for my birthday last year. I think was more for him than me… He loves my ketchup.

      Thanks Karen! Believe it or not my very first CZcams video was apart of The Inspired by Kneady series on her channel last spring! Heather asked me to make a video and how could I not do it for her! I showed how to make yogurt because in January 2021 she mentioned in a video she wanted to learn how to make it. Now 9 months later here I am! You will notice Heather spirit is in my videos maybe not the ones with strawberries but the rest is!!

    That problem with pickles persists here! I had to "clear shelf space" the other day. I was shocked how many pickles were there that were several years old.

      I heard the other week any cucumber with seeds are too big for pickles… so maybe I will try next year.

    There is a Ball book about canning small batches. That's how I would do cucumbers. Small batches relish, dill,bread and butter.About your beans don't pre-cooked your beans before you can them that is if you're just canning beans. And if you still don't like the look of them just make them into refried beans afterwards then.On your pumpkin's I scrub the outside of mine pumpkin real good then cut them into chunks then drain them then peel them afterwards its alot easier that way.Or cut them in half and try roasting them, scoop out the inside and use in a recipe that way. Or just store your pumpkin's whole as they are. For later use their good for 6-8 months. I would use pints or pints and an half instead of quarters for your canning of pumpkins the only difference is I mashed the vegetable before you put it in the jar. It's enough for 1 pie,1 cake, 1set of cupcakes. But you probably already know this so I'll will stop talking. But here's a recipe to help get read of some of your not so good looking beans. Its called Mexican casserole it doesn't look good either. But my kids love it. They even ask me to make it on their birthday sometimes. 2qrts of drain pinto beans mashed, 1 can of cream of mushrooms, can cream of chicken, 1 4oz can of green chilies peppers, 1lb of ground beef with 1 onion chop cooked and drained off any fat, then mix altogether, next spray a 9×13 pan with oil, 1st layer of your casserole is 1 large bag of doritos chips crushed spread out evenly on the bottom of the pan, next layer of the casserole is cheese (cheddar or Mexican blend of cheese )your choice you will need 4 cups,last layer is the meat mixture pour on top cover tin foil bake at 350 for 30 minutes. Like I said it doesn't look good but it sure tastes great.

    I know what you mean - the biggest hit in our house was MUSHROOMS - I couldn't put up nearly enough of them, the kids would eat them out of the jars when I wasn't looking ... but made some at the cabin, and just the change in wells changed the taste!

    I make my pickled onions refrigerator style. They stay crunchy that way and last for a long time.

    You don't have to cook those beans one minute before you can them. You put a "scant cup" in a quart jar, your salt and spices. I add a jalapeño and garlic because that's my style. Then pour in boiling water to the fill and throw them in the pressure cooker for 90 minutes.
    Now beans in summer with out turning the kitchen into a blessed sauna.

    With excess peppers, try the NCFHP marinated peppers! Great to pour over a roast in a crockpot or include in a pasta dish. A definite Italian flavor that we love! Plus you wb them

    For the peppers, they work better as tomatoes, peppers and onions, or pickled peppers, or pepper jelly. All of those are water bath canning and the peppers hold their shape and texture. And I use tomatoes, peppers, and onions (TPO) for everything...TPO and hamburger and elbow noodles with salt and pepper to taste is a great goulash that my family craves. It will also work as a chili base, as spaghetti sauce base, a tomato soup base, its endless.

    Thanks for sharing. Please don't give up on canned beans. They are one of my favorites. Rebel can them 1/2 cup for pints, 75 minutes,. They come out perfect.

    I canned a bunch of peppers, too. My big mistake was that I should have peeled them first because if you leave the skin on they will be bitter. Or at least that's what happened to me. I did them by themselves and I also did them in Pepper Soup without peeling and it was a soft bitter mess! On the other hand, I made another batch of Pepper Soup but this time I peeled them and it is REALLY GOOD.

    I’ve done Heathers French Onion soup for a Long time, it makes the best Roast beef. My family raved about the flavor it gave the meat, and I add it to most of my soups!

    I do all my beans DRY they are perfect!! Try it sometime they are great! I also do DRY pack potatoes they are awesome (chop, soak, rinse at least 3 times) jar up no water

    Yeah, with peppers, I'm right there with you on not canning them. I don't care for them that way either. I either freeze or dehydrate mine if I have an abundance. I like seeing what you and other people like and don't like to can. So interesting!

    Thanks for hosting this collab. I'm taking notes of things that are recommended and discouraged. When I evaluated my pickle consumption, I realized that I sliced them on burgers, chopped them to make tartar sauce and chopped them to make 1000 Island dressing. Trom that time on I decided to make Dill Relish instead. it meets works for all three uses. Canned pumpkin is on my ALWAYS list. I used it to make pies and pumpkin bread and feed it to the dog. The vet suggested it as a fiber source (nice firm turds). Draining the pumpkin doesn't bother me. I know if I want to bake with it I need to prep it the day before. I use up any leftover in Pumpkin Oatmeal. For me the best peeling technique is slice the pumpkin and then remove the peel from each slice using a knife. Yes, it is a little time consuming.

I love the crunch of store bought pickles when I’m at a gathering! I might try your method of canning pumpkin. I just hate not using the whole jar when I open it. I don’t have dogs or chickens that would eat it. Thanks for watching!

    We love pickles! We eat about a jar a week. I have never canned pumpkin myself. I always buy commercial. I don’t can beans either. They get mushy.

    Girl, run those pickles through the grinder and use in salads all summer. Potato, macaroni, chicken, egg, tuna...we eat it on hot dogs and burgers as well.

    I always blanch my greens before chopping and filling the jars. Save the liquid, after cooking the greens, just wring them out in hand sized balls...chop as fine or rough as you prefer to, the fill the jars, top off with the blanching liquid.

      I will try that! I really have problems with siphoning when canning Swiss chard in quarts. Pints seem to do well but husband insist in me canning in quarts. I keep telling him he needs to help. Lol

    Agree with most. Love canning meats: hamburger, chicken, beef roasts. Haven’t tried pork…yet.
    Love canning potatoes, sweet potatoes, tomatoes, tomato sauces, broths & dried beans. I do not precook them. Watch Heather’s videos. My husband loves mushrooms so I can them, for him. Oh and onion jam. Which brings up any other jams/jellies. More that I want to try.
    I am done with canning pickles of any kind. They are non-essential, take up space and I would rather just buy them if needed/wanted. So far that’s the only thing that I can currently say that I will not can again.

    I eat a lot of sweet pickles and use them in chicken, tuna, and egg salad- I can 14 day sweet pickles and sweet lime pickles - old fashioned recipes that take your chicken salads to the next level - also i grew up eating the sweet lime pickles so yeah. I love them and can’t find them in the store & now I know how to grow cucumbers so It’s very economical for me.

    I’m with you on the pickles. I stopped making them years ago. If I want a pickle I just buy a small jar for my husband and myself. The things that I do can every year for my husband is corn relish and potatoes. Even as many years as I have canned I am still learning and updating all the time. Great video.
