    Deep fried milk is a custard made with cornstarch. Once it's thickened it's cooled, then sliced, dipped in batter and fried.

    As a Hong Kong native, I can assure you have put soy sauce into the appropriate items and I immensely appreciate that. Most dim sums have already been well seasoned on their own, so putting additional soy sauce on them would render them too salty. Steamed rice bowl and cheung fun are two of the very few if not the only two items that we would put soy sauce upon being served. Instead of soy sauce, chili oil is a common condiment as well as Worcestershire sauce which is served with fried dishes like spring rolls to cut the greasiness.

    I just watched a video on fried milk. I think the traditional Chinese version calls for dairy milk, coconut milk, sugar, and cornstarch. It thickens on the stove and then you chill it before breaded and frying. However, apparently lots of cultures, like Spanish and Indian cultures, have there own versions of fried milk.

    Daikon cake - Shredded daikon, rice flour, chinese sausage (lap cheong 臘腸) + chinese preserved pork belly (lap yok 臘肉), dried shrimp (it's meatier than sakura ebi), dried scallop, dried shitake mushroom. Rice flour and then steaming it for an hour or more is how it keeps it's shape. After the steamed cake has cooled down, you cut and then pan fry. Here's a video from "Made with Lau" on how to make it. The dad in the video used to be a Chinese restaurant chef, and they are Cantonese. czcams.com/video/hN3hdW2it-0/video.html

    “Texture party” - That’s a great description. I love Vietnamese banh bot loc because of the squishy texture but also being able to see inside the clear wrapping. I’ve been craving dim sum ever since Shinichi got some a few weeks ago!
    And thank you Satoshi for wearing a mask when not eating just in case. It’s infuriating seeing other YTers like Dancing Bacon keeping their masks off in between appetizers/meals while a chef cooks in front of them. The world is not cured yet but we just need to hold out consistently for a little longer!

    • @lmaree200886
      @lmaree200886 Před 3 lety

      DancingBacons are in Singapore with much lower local cases than in Japan though, that’s why those ladies don’t wear their masks as often. Singapore has less than 100 cases a day in comparison to more than 1000 in Japan.

      When I lived in Prescott Valley there was this great Chinese restraunt that had the best wanton soup. It was one of the only things I would ever eat at two years old from there. I made my dad eat the wontons, but I liked to eat all the vegetables out of the soup and the broth. I would take the big spoon they gave and fill it up with soup and veggies and sit on the plate in front of me and take my little baby spoon and eat one veggie at a time. I would sit there forever eating to my hearts content. I believe if memory (and my dad) serves me right it was called the Cantonese Café.

    This looks soooo good. I miss eating dim sum. There used to be a good dim sum place in Rotterdam but they closed a couple of years ago :( I should keep this place in mind for next time. I want the charsu one!!!! Everything with sharsu has my name on it :D and I think the yuba one looks very good as well. Daikon mochi is something I try to make at home :) I tried making it in the microwave, that was a huge fail hahaha I looked up the deep fried milk; they thicken the milk with starch. I also discovered that in Spain there is also a deepfried milk dish that thickens the milk with egg yolk. There are recipes for it. Perhaps I'm going to try making it one time.

So good, you should try them! But I love all sorts of dimsum from THW. Yum, yum. Spain also has its version of "fried milk".
