Tiki Cocktail: Painkiller

- The Painkiller was created by an English bartender named Daphne Henderson at a bar called The Soggy Dollar Bar on the island of Jost Van Dyke in the British Virgin Islands around 1971. The only way to get to the bar was to swim, hence the name. The story is that after it's creation word got out that she had created this secret rum drink and it became so popular that people began to come in droves to have this drink. The Painkiller was born! Originally this drink was made with Pussers Navy Strength Rum and it wasn't long before the founder of Pussers Charles Tobias took notice. The story goes that he went to the bar, tried the drink and loved it. Over time he became good friends with Daphne but would not reveal her secret recipe. Eventually Tobias was able to get a drink from the bar back to a boat and then his home on the island of Tortolla. There he set about breaking down the Specs. He knew the general ingredients so it wasn't long before he got to a ratio he thought was right. He returned to the bar to announce he uncovered the secret and they did a side by side comparison with some patrons and they unanimously agreed that Charles' was the better version as it was ever so slightly less sweet than Daphne's version. He then began serving the Painkiller at his own Pub and took the recipe around the world, all the while it is said that he did give full credit to Daphne for the drink.
A couple of notes on this recipe: I didn't use Pusser's rum, I used another Navy strength Rum Smith and Cross which made a damned fine drink. Also I omitted the Nutmeg on top just because at the time this was filmed I was out of fresh Nutmeg and I don't like to put preground stuff into drinks. So definitely add fresh grated Nutmeg on top of the ice for a more traditional Painkiller. All recipes on this series are my preferred version and won't always be the most traditional, but the version I prefer.

Heck yeah! Tiki and the nice mugs it uses! Thanks Leandro!
And Coco Lopez still dominates; I don’t care about the chemicals, that can of coconut deliciousness is legendary!
Great drink & a great tiki mug!
Great drink! At the Soggy Dollar Bar it is served on the rocks with Nutmeg grated on top.
Thumbs up for tiki I love tiki drinks can't wait to see more.
Love it! Tiki mug is awesome, I'm jealous!
Would love to see some more tiki cocktails on this channel. The drink looks good, I'm gonna give this one a try in one of my tiki mugs! Cheers
The Painkiller is one of my top three drinks to make. On drinking nights I start off with something I've never made before and inevitably switch back to this. I have found that I LOVE Rum. The combination of Rum, pineapple and coconut cream is, like you said, dangerous. Thanks for the upload!
thanks for watching
Looks like a Fog Cutter mug to me! That should be your next tiki drink. Great vid! Love this drink!
Love this drink. Very yummy.
Kind of funny that I had a Painkiller yesterday at Bahama Breeze…..it’s popped up on my suggested videos today.
Smith and Cross is amazingly good. Never heard of it until watching one of your videos so thank you for turning me onto a great rum!
I use Smith and Cross for this and for a Mai Tai, it's awesome.
Beerus- Sama I’m with you. I use Smith and Cross wherever and whenever possible! It’s such a reliably good, slightly over-proof rum!
The name alone made this one of my favorites!
Tried this with 0.25oz lime juice and a blend of 1.5 Appleton 8, 0.5 Smith & Cross and 0.5 Doctor Bird. Loved it!
LOL at Shake a dake ... Back in the 1960s My Mom would take us kids to Ding Dong for a visit to the riding stables. It was down at the River... what a hoot.. . Mom stays at the Central Texas Veterans Cemetery now not very far from those riding trails along the river. Good times were had by all in Ding Dong, Texas!! BTW I'm crushing this tiki drinki.....
I made this tonight with a 1 oz of smith and cross and 1 oz of el dorado 3 year. I threw in a 3/4 oz of Hamilton 151 cause I was feeling saucy and it was so good! I added an extra 1/2 oz of the coconut cream too
I friggin want that mug!
I was only reading about Posser's legal case last week and thought, "I wonder if The Demon is going to make a Painkiller". I have all these ingredients so will definitely be making this. Looks good!
*Pusser's Rum
At the Tortola bar they call them by number: so Painkiller #2 has 2oz of rum , Painkiller #4 has 4oz of rum, etc
I'm sure you know this at this point, but I'll add this: Pussers rum isn't Jamaican. It is a blend from Guyana and Trinidad.
I’m pretty sure it’s 100% Guyana.
@@blakedesmondthat comment is 3 years old. Pussers expressions haves over the years.
@@maitaioneon Right and I’m replying now it’s a 100%. What’s your point?
@@blakedesmond what do you think the point is? The video is three years old and so was the product that was in the video.
Shake-a-dake-a-ding-dong
I had a Pusser's Painkiller No. 4 * at a Pusser's Store in Freeport, Nassau in the '90s. The bartender built the drink in a pint volume Navy Rum enameled mug. First he dropped in about an inch of pebble ice, then sprinkled spices [Allspice, Turbinado Sugar, Mace?] and followed with a generous splash of Coco Lopez which had been sitting over a candle. The hot coconut syrup encapsulated the spice granules. Following that the Pineapple and OJ was poured in, and topped with 4 oz of rum. [*No 2 = 2 oz, No 4 = 4 oz, No 6 = 6 oz. -- I think if you asked for a No 8, they' just sell you the bottle.] The concoction was stirred -- not shaken or flash blended. The result was that as one got to the Sandy Bottom, the congealed lumps of Coco Lopez with spices and ice bits were a crunchy treat.
I've updated my recipe: I don't care about what's traditional or original. This tastes great.
2 Plantation Original Dark
2 Pineapple Juice
1 Clementine Juice (We buy them by the bag and they work great. About 1 per drink)
3/4 Lime Juice
3/4 Creme of Coconut
10 drops Saline (It does not taste salty)
Nutmeg (just enough for aroma)
Doesn't this typically have copious shaved nutmeg on top? Always enjoy some tiki action
Allegedly, Pusser's bought the rights to this drink so that they could control the naming of this drink, thereby ensuring that only Pusser's is used in a cocktail by this name. This is also said to be true for Gosling's and the Dark and Stormy. That aside, this is a delicious Tiki drink and definitely one of the easier ones! That coconut cream looks great. Since I cannot find Coco Lopez or Liquid Alchemist products, I just add some simple syrup to canned coconut cream.
Cheers!
Smuggler's Cove does something similar in that they do 1 part unsweetened coconut cream to 1 part rich simple syrup
Sounds good! If Pussers sends me a cease and desist, I’ll make a video about it and rename the cocktail :) apparently goslings does the same thing with dark and stormys but I’ve never heard they’ve taken legal action. Will be interesting to see what happens
There is a prominent chain here in Canada that has a Painkiller on its menu, and it isn't Pusser's, so I am guessing that it is not enforced. But hey, this channel could get big enough yet to draw the attention of industry giants!
Fuck them! They never invented the pain killer! Let the free market ride! Whoever invented the pina colada could sue pussers with the logic pussers is using!
Mix some Coco cream with half and half and see the results
Wow
I like the way your hair dances when you shake
I like to serve tiki drinks in a snifter! Not as cheesy; adds a Bit of sophistication to the drink.
If you shot the pour from above (and cut to that angle once you crack the tin open) I think we would see the drink really clearly. I do love that you don't cut all that often in your videos though. Great stuff, as usual.
I typically used a goya canned cream of coconut for this drink, ill have to try that coconut syrup you used
My wife's favorite drink. I usually cant find coco Lopez easily so i get the goya coconut cream. And do a mix of 1oz white rum, 1oz kraken black rum, and a 1/4oz 151.
3:56 shakadakadingdong
Pusser's is the "official" rum used in the Painkiller, according to my old neighbors who went to the British Virgin Islands. Smith and Cross probably works fine though.
Goodluck getting those syrups in NJ
Very exited to try this tonight! How do you juice your pineapples?! I used a magimix which is a bit of a faff (mainly the washing up!) for just one pineapple. Plus then had to fine strain as was more like a puree. Is store bought pineapple juice ok to use in tiki drinks?
You can use any rum and any juice in any tropical drink. Certain brands or recipes only matter if you want to make an identical drink, but the kind of juice (pure, not concentrate) you use is unlikely to make that much of a difference.
Aroy D is the Thai brand of coconut cream. It isn’t sweetened but works great in cocktails
Cole Youngner I’ll check it out!
@@TheEducatedBarfly Martin Cate's recipe for coconut cream...
13.5 oz can of unsweetened coconut milk (Aroy D is the best on the market)
13.5 oz of 2:1 rich simple syrup
1/4 teaspoon of salt
Combine all with immersion mixer/blender. Holds in the fridge for 2 weeks.
I went through a big tiki experimentation phase and this coconut cream put the Pain Killer on the next level. I didn't have an opportunity to try the Liquid Alchemist products here in Chicago but I'll be on the lookout. You should try and get a partnership on your Amazon store so you can get proper attribution ($).
I believe Pusser’s is from Guyana.
Tried to find the “liquid alchemist “ coconut cream on their website but couldnt....is it something not available to public yet? Ended up with some Thai version that was basically solid when i opened the can. Had to heat to be able to pour and measure....tasted great though.....thanks as always Leandro
No it's available but it is new. Maybe they didn't put it up yet? Not sure. I won't make videos with unavailable items usually. I'll email them and find out! LOL either way you can always sweeten some coconut cream and it'd be the same.
I tried it with pussers and Smith and Cross. Smith is way better, not surprising cuz it's my fave along with Appleton 12. The Funk Rules
Tiki cocktails are honestly a big piece in the original mixologist revolution . Tiki drinks are super intriquite
In my opinion (as a heretic), this drink benefits from substituting lime juice for some of the pineapple juice.
I agree with this. Or I just leave out 2-3 oz the pineapple juice all together. I love pineapple juice, but half of the drink is wayyy too much for me.
If you hit the Hispanic section of the grocery store, Goya also makes a coconut cream that I think is better than Coco Lopez. And it's cheaper.
Goya makes a delicious cream of coconut.
Where can I buy the liquid alchemist coconut cream? I can find a place to buy online.
I think the only place to get it is on their website unless you’re in California www.liquid-alchemist.com
Hey Leandro, great video. I bought Coco Lopez as mentioned in the video. It is cream of coconut
and on the recipe it calls for coconut cream. What's the difference
between cream of coconut and coconut cream? Did I buy the wrong Coco
Lopez? Does it matter :) ? Thanks in advance.
No you bought the right one there is a very stupid distinction between the two....and I refuse to partake in the insanity
@@TheEducatedBarfly I feel like this was a past argument turned ordeal. I apologize for bringing it up haha
Caleb all good I just maintain and will always maintain that the distinction between cream of coconut and coconut cream is stupid if we’re talking cocktails it’s always gonna be coconut milk with added sugar unless otherwise noted
@@TheEducatedBarfly Makes sense. Just one of those stupid little things that was stuck in my head. Thanks again.
Hi Leandro, I wanted to ask for a long time but never did so here it is : how do you make your pineapple juice??
Excuse me if it is a dumb question
Thanks for all the good content, hope that you will keep on going forever!
I strip the pineapple of the outside with a knife, cut into chunks then put into a juicer. Then I double strain the fibrous pulp out with a fine mesh strainer. Not a dumb question at all!
@@TheEducatedBarfly thank you for your answer ! Any way I could do it with a blender?
arthur courbet It’s the same physical process more or less, so if your blender can do it, do it.
So... it's an ultra-boozy slightly funky (from the Jamaican rum) Piña Colada? Sounds good to me.
Hey Leandro we are coming into LA next week from Philly. First where can we see you and second other suggestions?
Anand Mudaliar i work at Coles French Dip
In downtown and I’m only there during the day and not on Thursday. I have a ton of other suggestions here’s a few: first the speakeasy in the back of my bar is called Varnish and it is a must, second: the nomad Hotel, Lono in Hollywood, The Spare Room and Musso and Franks
@@TheEducatedBarfly thanks man. We got nothing to do so during the day sounds great. We will come say hi and will 100% check out all the other places too.
I will keep this list... and check it out in future with uber... wellbeing
Is coconut cream like coconut Sirup? We dont have that stuff here
Nah, it’s like the thick cream on top of coconut milk. I’m not sure if he used sweetened or not, but you can taste it without first and add some simple syrup if you want it to be sweeter.
NGL I actually cheered with delight when I saw the Smith & Cross there. How to Drink did one with Plantation 5 Year and, despite being a purported adorer of Smith & Cross, said it was the best he'd ever had, but when I tried it, the rum absolutely vanished. It was BEST with Smith & Cross. My man, Leandro. The correct choice
I can go to an Asian grocery store and find multiple brands of coconut cream. Is the coconut cream a bartender would use different from the coconut cream used for cooking and baking?
Only in thats it’s sweetened. I make my own using a brand in a shiny blue can and it’s great (and cheap).
@@SNRejected So the bartenders coconut cream is what would be labelled as cream of coconut in grocery packaging.
yes bartenders technically use cream of coconut as it has been sweetened but all brands ie: coco lopez or liquid alchemist label as coconut cream for some reason. Just make sure you either buy a sweetened version or add sugar when making at home. :)
Get ready for a lawsuit.
Yeah, my thought, too, when I didn’t see a certain rum brand.
Do a Miami vice
What happened to the nutmeg garnish?
Kent Baker I took it out, by add nutmeg for a more traditional one.
You forgot the nutmeg.
Spencer Thayer no I intentionally left it off
@@TheEducatedBarfly to avoid a lawsuit? Or cause you don't like the earthiness the nutmeg adds?
Spencer Thayer nah I just like it better without. They probably would hit me with a cease and desist before a lawsuit happened. I wrote about the exclusion of the Nutmeg in the show notes and anyone can add it if they like
Where do you get bags of crushed ice??
I get them from an Ice company and I use pebble Ice not crushed. You can get bags of them from Sonic if thats a chain near you.
The Educated Barfly is the ice from Sonic the same kind of pebble ice? Also, do you happen to know the name of that ice company you get yours from?
cameron hitchman yes the sonic ice is the same style pebble ice, I usually get my ice from a local company Called North Hollywood Icebor a company called nève which distributes locally. Where are you I. The world I may be able to point you in the right direction
The Educated Barfly ok thanks for the info and I am located in Sacramento! Thanks so much for the replies too
I work for an American cruise company...I am always suspicious about the jigger...
maybe you can help....1¼...and ¾...how much is in ml....
1 1/4 is 37.5ml and 3/4 is 22.5ml
Forgot the fresh grated nutmeg
classic barfly
I hope we get a Zombie soon!
Why is it called navy proof?
@John Deaux oh that's fascinating thanks for the information.
Go to an Asian or Latin store they have a ton of coconut cream brands
They would, but this drink calls for Cream of Coconut which is different. It's basically Coconut Cream + Sugar and emulsifiers
Legally you cannot call this a Painkiller if you don't use the Pusser's rum Because he actually copyrighted the name!
Yeah and they sued a couple of bartenders for using that name and the entire industry let them have it. What’s so ridiculous about the copywrite is that the original was made with Cruzan.
Trying to find a Keto answer to coconut cream.
Where's the mug from?
It's from a bar in San Francisco called Bon Voyage. Here's a link:
bonvoyagebar.com/
No nutmeg? Why mugs? Is that a tiki thing?
Where is the cinnamon syrup?
No nutmeg?!?
Where is the nutmeg?
You might get slapped with a lawsuit since you didn't use Pusser's Navy Rum
Jack007 if they send me a cease and desist there will be a video about it, and I will just change the name of the drink. I can argue that since I didn’t use Nutmeg it’s not a real painkiller LOL
I think the only trademarked rum drink like that is the Dark And Stormy
There weren't boats in 1971??? 😁
If you want your boat to run aground... It's too shallow to get a large boat in and you'll still need to get out of a small boat in the water.
Smith & Cross is probably my single most favorite rum but I wouldn't be surprised if Pusser's legal team came after you for this. We all know what happened to PKNY.
If they do, you'll see a video about it. I'm sure they'll just send a cease and desist.
here's an article about why Pusser's may not come after me:
drinks.seriouseats.com/2011/06/pussers-rum-painkiller-trademark-lawsuit-downside-pr-disaster.html
How does Appleton estate signature blend compare to smith and cross? Besides the obvious ABV
No Idea how you could produce this drink to perfection with using NUTMEG.. the "KEY"
You forgot nutmeg
where is nutmeg? :o
Michal Malý I opted to leave it off but to be traditional get some on there!!!
?nutmeg
I've actually been to the Soggy Dollar bar. They didn't use crushed ice in the Painkiller, just ordinary ice cubes. Just sayin'!
crushed ice looks so much better though, don't you think?
@@TheEducatedBarfly I know it over dilutes the cocktail, and that annoys me more than the drink not looking as pretty as it could!
Spud Gunn every drink over dilutes as it sits but crushed ice is great when the cocktail has been properly chilled ahead of time. The point is the extra dilution these overly sweet drinks need
@@TheEducatedBarfly I just like them how they made them at the Soggy Dollar Bar, with ice cubes. When I had one in a cocktail bar in the UK, they made it with crushed ice, and it was just too watery compared to the original. That's my opinion, anyway. Still, each to their own, eh!😉

Ashamed to admit that I’ve slammed 5 of these in succession at Tonga Hut in North Hollywood. Such a delicious fucking drink
A better version of a pina coloda, yes. A tiki drink absolutely not.
Also if you were to do a dive into the history it would have been nice to hear the full story, deceit law suits and all.
this is a very old video and we have addressed the lawsuits etc in subsequent videos
munKtiki
thanks LOL
I've tried this Smith Rum in 4 drinks, I don't like the taste.
Iys not "Pussers, its PRussers. Also, im sure you know this but prussers trademarked the painkiller drink, essentially stole it from Daphne. So you just broke the law my friend
Totally fine with ads... But that's to much product placement. Sorry...
There's no product placement in this video except for the bar tools. The rest are just mentions, but no one paid and or asked for it. A lot of people ask which brands and bottles we like to use so we try and mention that when we can. But you can use whatever you want :)
@@TheEducatedBarfly Cheers to your reply! I totally respect and appreciate that! Wish you all the best, cheers! 🍸

2:30 well given that absolutely everything in the universe is composed of chemicals, I guarantee it does ;)
It’s not pronounced “Poo-sers” it’s PUSSers as in an infection that has Puss!

Liquid Alchemist, in my opinion, is shit.
"I think it has chemicals in it". Cool, unsub. Way to sound ignorant.
Zack Watson it has BHA, which the department of health and human services says is “reasonably anticipated to be a human carcinogen.” So basically he’s right, it does have nasty stuff in it.
