    This is the first video in a mini series dedicated to enjoy life with family and friends during the summer months.
    I’ll share with you simple and easy recipes to bring along on a sunny day, and some of the best tips to keep your family and pets safe during the hot weather. Pesky bugs anyone?
    Today with start with two super yummy recipes!
    VEGAN CASHEW NUTS CHEESE
    Ingredients:
    75g cashew nuts;
    150ml water;
    4 TBSP corn flour;
    3 TBSP nutritional yeast;
    2 TBSP lemon juice;
    1 TBSP olive oil;
    3/4 tsp salt.
    Method:
    Put all ingredients in a blender, and blend at high speed till all ingredients are liquid and smooth.
    Transfer the blend into a pan and place on low heat on the hob.
    Stir continuously till the liquid turns into a thick paste.
    Move the paste into a plastic, fridge safe container (or cheese mould if you have it) and press it down firmly.
    Place the container in the fridge for a few hours, until the cheese is fully set.
    When ready to consume, take the cheese out of the mould by turning it upside down.
    Serve with any dish you like, such as a lovely summer salad, sliced avocados, eggs, etc.
    EASY PICNIC STUFFED BREAD ROLLS
    Ingredients:
    250g milk;
    50g unsalted butter, diced;
    50g sugar;
    One sachet of dry, instant yeast;
    500g bread flour;
    1 tsp fine salt.
    Method:
    In a food processor, mix all the dough ingredients, and knead for a few minutes, till the dough is stretchy and elastic, and retains its shape. It might take around 10 minutes.
    If you don’t have a food processor, place the ingredients in a large bowl, and knead with a mixer, using the dough attachments.
    Alternatively, knead by hand.
    Once the dough is ready, place it in a greased bowl, cover with a damp tea towel, and place on a windowsill or on your kitchen table. Let it rest for about 40 minutes, or until doubled in size.
    In the mean time, decide on what fillings you want to use for the rolls. Feel free to use both savoury and sweet ingredients. For example, choose between:
    Ham
    Salami
    Cheese
    Pesto
    Bacon slices
    Peanut butter
    Nutella
    Jam
    Etc
    After the dough has risen, place it on a floured surface and divide it in as many rolls as you want. I made 8 rolls in total, but they were quite large. Make more if you prefer smaller buns!
    Flatten each roll, and place a teaspoon of filling on the top. Using the stretch and fold method, make sure to cover the filling completely, so that it rests in the center of the roll, and doesn’t spill during baking.
    Place each roll on a lined oven tray, making sure to space them well, as they will grow bigger during the second rising, and then again when baking.
    Cover the rolls with a clean tea towel, and let them rest for a further 20-30 minutes.
    Towards the end of the second proofing, preheat the oven to 180 C degrees.
    Before cooking the rolls, brush them with a beaten egg, and sprinkle with sesame seeds (optional).
    Bake for about 20-25 minutes, till the rolls are golden.
