    Grade B maple syrup technically doesn't exist anymore. They revamped the grading system so that everything now has a Grade A label, although it's rolled out with various degrees of speed. My co-op only recently started getting bulk containers that don't carry the Grade B label anymore.
    Those looking for the beloved Grade B flavor will now want to look for syrup labeled "Grade A: Dark color and robust flavor." They literally made the system as confusing as they possibly could for consumers, all for the sake of branding vanity because they didn't want people to think that Grade B was lower quality (even though it had a strong following, and Grade C was never sold to consumers anyway). Now we're stuck with FOUR different Grade A syrups with ridiculously long names.
    Grade A: Golden Color and Delicate Taste (used to be Fancy)
    Grade A: Amber Color and Rich Flavor (used to be Grade A: Medium Amber/Dark Amber)
    Grade A: Dark Color and Robust Flavor (used to be Grade B)
    Grade A: Very Dark and Strong Flavor (used to be Grade C, not sold retail)

    For Pina Colada French toast: add a couple tablespoons of pineapple juice to the batter and serve with caramelized pineapple rings.

      Or you could simply cook the pineapple separately in a syrup of its own juice, some brown sugar and butter, then serve over top. No need for maple syrup.

      You should know that moisture is what makes bread go stale. The bread does not "dry out" it gathers moisture from the air and that moisture reacts with the bread to harden it. So your stale bread nonsense is 100% false.

    I love Thai sweet sticky rice with mango. This reminds me of that. Instead of lime, toasted coconut and syrup. I would drizzle with coconut milk sauce.

    Nice! For all my vegan pals, sub the eggs with a heaping tablespoon of ground up chia seeds, and let the batter sit for about 10 minutes before soaking the bread :) Just add more coconut cream if the batter turns out too thick!

    This video taught me that the main thing missing from my french toast is that I was not using nearly enough butter. Tried it today with more butter, and it was ten times better.

    I believe what used to be "Grade B" maple syrup is now "Grade A Dark" or "Grade A Robust", at least at the maple boutiques I frequent.
    That said, Chef John produces the finest food-related content on CZcams, so if he told me I was wrong, I would accept it completely. I might even grovel for forgiveness.

    I thought of something; you could make a filling for the French toast by mixing a bit of mascarpone (or cream cheese), coconut flakes, coconut milk, sugar, and some vanilla then stuff it into the French toast and cook it...you could even freeze the mixture then stick it in the French toast and cook it, causing it to melt over the heat I haven't made it or tried it yet but it sounds good

      I just use a dipping bowl of syrup. Way easier to get the perfect amount. And yes, I double dip.

    I make a loaf of bread every week, and it has a pretty good shelf life. In other words, it stays reasonably "fresh". For this recipe, I'd put the sliced bread in the oven for a few minutes to dry it out. Then, go with the Chef's instructions.

    Very nice as usual your dishes are always good and I have made many many of them. The only thing I would change here is I would toast some ribbon coconut. It would look better and taste great! I make my own granola all the time and I am not fibbin when I tell you ribbon is the only way to go!

    Here's a hot tip. Put a layer of red bean paste between two slices of stale bread before dipping the whole sammich in that mix.

      Well the acidity would probably help alleviate a lot of the richness from something like french toast. Buuut it'd probably need a little push. Maybe grate in a bit of orange zest in the wet mix for some orange flavor to accent? Maybe some orange liqueur splashy-sploo'd in 'er? Experiment, it's a recipe!
