    Ingredients:
    1/2 C reserve kombucha
    (reserve kombucha is kombucha left over from a previous batch...
    in this case it's kombucha left over from when I grew the SCOBY)
    1 SCOBY
    5 bags black tea
    1 C sugar
    1 gallon spring water
    Supplies:
    6 QT stainless steel pot
    1 gallon glass jar
    Breathable cloth
    Rubber band
    Wooden spoon
    Bring water to a boil.
    Add sugar, stir and let dissolve for 5 minutes.
    Add bags of black tea and let steep for 10 - 15 minutes.
    Cover pot and let tea cool to room temp.
    Add reserve kombucha and SCOBY
    Cover jar with cloth and fasten with rubber band.
    Let sit in dark quiet place until feremented and baby forms.

    wow, only 12 days later my scoby is about ½inch thick. i tasted it and it already tasted like the kombucha i bought in store. i will make the one gallon batch now. :) your recipe is really good. no hidden technique like others, very simple and easy

    I like your video. Unlike others, you explain everything clearly. About a week ago I watch your video showing how to make mother kombucha. I made it yesterday (2/13/12) and hopefully it works. Now I'm just waiting for the mother to form so I can make batches of my own kombucha. Good work, keep it up. :)

    I got me a spigot bottle yesterday and all the fixings. Now I hope the SCOBY given me is still alive, despite my best efforts to kill it. I like the idea of the constant brewing process myself. I have some top quality Indian black loose leaf tea I will start off with. This is indeed exciting! Cheers and thanks for your good work.

    Very informative! Very precise and good showing of what you are doing as well as the writing. One suggestion, not for me but others who maybe can't read as well, words in addition to where the writing is. I'd hate for someone to miss out on this just because they don't want to ask someone to read it to them. :) Great video (both of them-I checked out how to make scoby and plan on doing it tomorrow)!!     Sweet leaf stevia makes stevia in different flavors and im thinking about doing that while adding some of my chlorella tablets in there as well. Great video mate!

    Just bought 2 two gallon jars from Walmart for $9.97 a piece and had to refer to your video on how to make my Kombucha. I already grew my first scoby and so excited to make my first batch of tea to drink. If anyone is looking for the 1 or 2 gallon jars, look for the Anchor Hocking Heritage Hill 2 (or 1)-Gal Jar with Lid at walmart dot (com) from $7.44 to $9.97. Best prices I've seen anywhere. Thanks for all the great info!!!

    Thanks I'm going to start to make it , I'm diabetic in my mother was too but she didn't teach me how to make it ,it makes me feel real good . I think it helps me with my diabetes .

      Hey adrigar2011,
      it's probably the probiotics that's found in all fermented foods,fermented veggies have some of the highest levels of probiotics found,much higher than yogurt or kiefer,the probiotics add strength to the immune system.

    This is a great video! I just ordered some supplies to make my first batch. I can't wait. I hope it comes out as well as yours. :) I wanted a question though. I know kombucha is supposed to be a healthy drink, and a good alternative to soda, but one of my guilty pleasures is a rum and coke from time to time and I wanted to know if I could mix rum with the kombucha and drink it like I would with soda as an alternative to coke? Thanks for your time. :)

    I just found your video and I am going to use it to make my first batch. It is to the point and simple to follow! I found some others and they seemed confusing. You did say to store the scoby's in the frig. I saw somewhere to let the scoby come to room temp and do not put it in the hot tea. You mentioned to let the teal cool all they way. How about the scoby coming to room temp?

    Great vid, thank you so much. It was very clearly explained, which I appreciate a lot! Can you tell where I can go to see more on the ph issue..that was the only part I didn't really understand. Also, I don't get the bottling part where you shouldn't put the top on the bottle...when you buy it there's a top....should you just put it in the fridge??

    Hi, I just found this info online which was very reassuring, it relates directly to the issues I was having:"You may see a brown stringy substance floating in the container, brown blobs clinging to the scoby, or dark sediment forming in the bottom of the container. All of these are byproducts of the yeast culturing the liquid and are not a sign of a problem."

    You could if you really wanted to. I'm not sure if it would taste right, though. I just used some of it as reserve kombucha to help start the next batch.

    It took a much longer time than expected to grow a scoby from scratch. 2 months. I read that since they changed the formula (industry-wide) to be less alcoholic, that it was difficult to grow a scoby from the bottled stuff. I ordered 2 scobies online, because I had just given up 2 weeks ago. Ha, but now I have three scobies :) ready to try my first brews. I'll save a fortune!

    Hello my friend,great teaching with your videos.i've been making my kombucha with unsmoked tea Yerba Matte,supposedly is healthier than regular smoked processed tea.but my tea doesn't get the brownish tint like yours or some i've seen.the taste is really strong even with 2 weeks cycle.the taste is different than others KT i tasted before.

I am thinking about making a larger batch size - maybe 3 gallons - so as to not have to make a batch every week. I am concerned about storage. The book says to store un-capped, but it leads me to wonder how GT's kombucas are capped for weeks before an expiration date is given. given that, shouldn't I be safe? I appreciate your thoughts.

    Helpful video. My first batch is likely ready now, but my funnel and bottles don't get in until tomorrow so I will wait. I want to carbonate the batch, I read if I use bottles that can handle pressure I can do that by bottling the batch, sealing it and storing it at room temperature for a few days, does this sound right to anyone?

    I made my SCOBY following your video and it looks great, and I just started my first batch - excited to see how it turns out!! My SCOBY was made with ginger kombucha from our local natural foods store because they didn't have the plain/original variety... I am wondering... what do you do with the rest of the reserve liquid after making the SCOBY? Can you just drink it? It smells wonderful; I hate to throw it out if I can drink it!

    I just bought a gallon jug and will make. I do not drink this often but think it will be good to try a bacth to see how it turns out and taste. Do you know long can you keep in the bottles in frige is a month to long?

    Yes you could, just make sure everything is room temperature first. And yeah, that is the same thing. I "think" some people attempt to use certain types of vinegar as starter liquid, but I've never tried / recommended that.

    It mentioned something about not trapping things that need to be released. When I make it / bottle it I usually put the cap on, but I don't tighten it all the way. That book was written in 1995 - that info might be outdated.

    Yes, you can. That may actually save on fermentation time and should grow a nice strong mother.

    CLEAR CLEAR SKIN!!!! But I have to drink about 4-8 oz a day in order to achieve this. 3-4 oz in the morning and 2-4 oz in the afternoon. My mom always made it for me but she has moved to Fla so now I am here trying to learn to make my own.

    What if there is mold on top of the scoby, discard the whole batch? Or just the mushroom?

    It depends on how effervescent you want it. What you read is probably that person's method / preference. The longer you keep it out of the fridge the stronger it gets. All putting it in the fridge does is slow down fermentation and makes it cold. When I make my own kombucha I personally never cap it tight as it shuts off oxygen and traps acetone which creates ketones (according to the book I use).

    Hi, there are green stringy things in my kombucha, do you know if this is normal? I stirred it in the first few days by mistake but won`t anymore after reading other comments on here. I also put the sugar in cold water and added it to the tea after it had cooled down, doh! I don`t know why I did so many things wrong but I read that sugar will dissolve in cold water. Do you think it will turn out okay? thanks.

    Question: I finished my batch of black tea and I wasn't thinking so I added 1/2 cup of Hibiscus flavored kombucha. Haven't added my scoby yet. Should I start over or is it okay to add the scoby?

    I am making my first batch of Kombucha, is it ok that the scoby sank to the bottom after floating on top the first day? I grew my scoby from GT Kombucha i bought at the Health food store.
