Here’s what you knead to know: Manipulating your yeast dough just takes practice. Watch our tip video to see the correct form for kneading dough. Follow along and see how the finished result should look, then practice on your own.
For more quick baking tips and tricks, subscribe to our video channel: bit.ly/YTkaf
Instructions: Turn your dough out onto a lightly floured surface. Using the tips of your fingers, fold the dough back onto itself. Using the center of your hand, push the dough away from you. Turn the dough 90° and repeat, flouring the board as necessary, until the dough is smooth.
As you get used to the motion, you can speed up; but remember that good form is more important than speed!

It's the yeast we could do. -👨🍳Ethan
As long as you are alive you can do this, just like the yeast.
Ethan 😂😂
Hi there! The basic explanation of the technique is in the video description. As to why one kneads, this is to help strands of gluten form in your bread in a way that is not so harsh that it then breaks these strands unnecessarily. Rotating the dough with each kneading motion ensures that these strands form in all directions. Hope that helps! -👩🍳Kat
Skills we lose as convenience at stores becomes a thing, but we're missing out on great things without these talents.
Tuck , roll, rotate 90 degrees, tuck, roll, rotate, repeat. Thank you for the tutorial. I never knew.

Kneading by hand really can be such a wonderful experience! 🥰 -🍮Kat
Holy... it looks way easier than I was making it. I had dough stuck to everything -- my cutting board, all over my hands, had flour everywhere. 😂
Innit, I got a bit better the more i baked bread (which hasn'tbeen much lately), this technique looks a lot better than how I was doing it.
Thanks this is really helpful lol. Im 14 so i should start Making my own food more often than what i do now
Thanks.

How do we know how long to knead the dough for? I want to make yeast pull apart biscuits. How long would I need to do this for?
Hi, Tanya! It depends on the recipe and the desired outcome of your dough. With biscuits it is generally less time than other recipes, as you'll want to keep your butter as cold as possible during the process. Let us know if you have any questions while you're making your tasty bakes! -🍮Nicole
thanks i think i know how to visualize the next time i try to make burgers or brioche buns
I have a question, I love in the UK and would like to know if there is any way I could obtain King Arthur Bread flour. I know you don’t ship to the UK and there are no Amazon listings, so do you know any way I could get this
Thanks for your L-oven 😊 Our flour would have to join in luggage with a flight, whether it be by you or someone you know who could bring it back. We've had many international bakers pack it in the luggage for their return home, packed with care. -🥐Lily
No problemo, I got this 🐔
Hmm do you still read comments after 8 years plus this helped a lot thanks
Simple. Easy. Informative. King Arthur is the best. HAIL EXCALIBUR!
So basically fold, push, rotate? All my bread kept baking up really dense. I’ll try this method next time. Thx.
Yup, that's all there is to it! 😊 -👩🍳Kat
I know bread is considered an easier thing but it’s difficult for me when I’m just starting out, all the recipes are “no kneed” and it’s confusing to me like what’s different about it that doesn’t require kneeding😭 and what recipe do I use if I wanna kneed cuz I feel like that would be calming to me
Hi there! We do have plenty of recipes that call for kneading. I really like this one, but if you're looking for a specific style of bread, do let us know and we'll help you find the perfect recipe for you: www.kingarthurbaking.com/recipes/french-style-country-bread-recipe. Happy baking! -👩🍳Kat
The no knead recipes rely on autolyse, or a resting period, to allow the gluten strands to develop. So kneading is much quicker but autolyse is perhaps easier. It’s up to you though I know most professionals knead 😉
I love putting this video on when my cat starts kneading
Hello! Can you let dough made with instant yeast rise overnight in the fridge? Or will it overproof?
Hi, Alina! You can put dough made with instant yeast in the refrigerator overnight. The cool temperature will provide added control. Happy baking! -🍮Nicole
How long does I have to knead for the doughnut dough by hand?
Hi there! It will depend on the texture of the desired result for the dough mentioned in your recipe. After mixing by hand to combine ingredients it can take anywhere from 5-10+ minutes to develop structure in your dough, based on how quickly the flour is hydrating/hydrated and how rigorously you are mixing. -🍮Nicole
I knead similar to this (maybe a little rougher) and I never seem to get the desired result, even with double the recommended time; the windowpane test feels like squaring a circle. I tried experimenting with more or less hydration, yeast, etc but no dice. The bread is ok but I know I'm missing out on something better- any ideas?
Hey there! Not all bread dough will reach the windowpane test, it's really only applicable to enriched doughs. -👩🍳Morgan
Question, what recipe did you use for the dough?
Hi Aurien! This is a basic sandwich dough, we have lots of recipes on our site! You can check them out here: www.kingarthurbaking.com/search?bc_product_index%5Bquery%5D=sandwich%20bread#recipe_index -👩🍳Morgan
Whaaaaat!! That's exactly how I do mine.
Mine NEVER comes out that way
Wtf am I doing wrong
I love how this video is only the kneaded information and nothing more.
😄😄😄 -🍮Kat
Two questions. 1. Does my hands need to be a little bit wet and 2. How long does it take to knead that size dough on average
Hi, Angel! Having a small cup or bowl of water to dip your fingers in while needing dough can be very helpful. It makes dough easier to manipulate, where adding additional flour may throw off the hydration level in the dough. For the length of kneading, it will depend on the recipe. Some recipes detail kneading until ingredients are just combined, while others will have you knead for 5 or more minutes to develop your gluten structure for strength. We hope this helps 🧡! -🍮Nicole
What if the dough was so sticky should i add more flour ? Its my first time making one 😅
Hi there! The techniques for kneading high-hydration dough are a little bit different. You can learn more about how to handle wet dough here: www.kingarthurbaking.com/blog/2017/06/19/kneading-wet-dough-by-hand Happy baking! -🍮Kat
Just used this in an attempt to make your keto pizza crust so fingers crossed
Best of luck! -🍮Kat
How long or how many times do you knead the dough? I'm making a crust for a (Chamorro) empanada and the recipe says to knead the dough until it is pliable. The main ingredients are masa harina and corn starch. Thank you! 🙂
Hi there! You'll want to knead the dough until you're seeing well incorporated ingredients and the dough becomes flexible without crumbling. Hydration is key with dough and you'll want to add a tablespoon or two at a time of either water or masa harina until you're finding your dough to be manageable. Wishing you happy baking 🧡! -🍮Nicole
@@KingArthurBakingCompany Thank you so much! 🙂
Is this the same for bagel dough?
Yes! 😊 Our bagels recipes will indicate the time and visuals for kneading. Providing a link to our "bagel" recipes! (www.kingarthurbaking.com/search?bc_product_index%5Bquery%5D=bagel#recipe_index) Happy baking, Kimberly! -🥐Lily
♡
I have never knead dough before so how do you know when its done?
That depends on the type of bread you're making! But for a standard white bread like this, it will start to feel like a proper ball, rather than a sticky pile. Unfortunately, it really is one of those things that can only *really* be learned through practice. But on the positive side, all that practicing gets you plenty of tasty bread! 😁 -👩🍳Kat
@@KingArthurBakingCompany thank you for the advice I wasn't expecting a reply because you uploaded this 9 years ago so that was pleasant 👍
Aw, it's our pleasure! 💛 -👩🍳Kat
what should i do if my bread is too sticky??
Lightly sprinkle some flour where it's sticky and/or the work surface. 😊 -🥐Lily
How long should a bread dough be kneaded please
That's a very complicated question, because the answer is: until it's done. As an example, my spouse has a much heavier hand kneading technique than I do, so if we were both to knead the same dough, mine would take nearly twice as long as his. Additionally, it will vary depending on the recipe itself! Some doughs take lots of heavy kneading, others take very little (and can easily be over-kneaded), and recipes call only for some gentle stretching and folding of the dough while it rests, and no kneading at all. A good recipe will tell you what the dough should look or feel like when it is fully kneaded, but in general, you want it to look smooth and hold together in a ball. I know this isn't as simple an answer as you were hoping for (I know I was very frustrated by this question when I was new to bread baking!) but it's the best one I have to offer. 💛 -👩🍳Kat
@KingArthurBakingCompany it's been 8 years ! How are you guys still responding 😂
People's questions matter the same whether they're asking on a video that's 10 minutes old or 10 years. 💛 -👩🍳Kat
Oh geez now I know why my bagels were messed up!
How do you know when you should stop kneading your dough ? I feel like I over-knead it :(
If you're kneading by hand, it's virtually impossible to overwork your dough, never fear! It's only when you're using a machine that this is liable to become an issue. -👩🍳Kat
Thank you so much for the very simple demonstration. It’s not as hard as I thought. My dough came out beautiful thanks to you.😘
It's a joy to help you bake your best! 😄🍞 -🥐Lily
How do you know when to stop kneading?
Hi there! You'll stop kneading when your getting the visual cues determined by the recipe you're using. Some recipes will let you know the dough will remain sticky, others will indicate the bread should be forming a ball or let you know how many times to come back to the dough to work it. -🍮Nicole
What is the name of this method of kneading
This is just traditional hand-kneading. I don't know that it has a specific name besides that. 😊 -👩🍳Kat

Mine is super sticky. After trying to knead for hours it gets to ALMOST the consistency that you BEGAN with. I have no idea what I am doing wrong. Others say flour the board / surface, others say corn starch. I use a Small Bench Scrapper to try to gather things together to knead and fold the Dough but still nothing. I'd like information. Please.

@@KingArthurBakingCompany OMG Are you guys all so darn nice? Lol
No bread recipe I’ve ever tried (yes, I’m still too much of a newb to do it without a recipe) has produced dough that doesn’t quickly turn my fingers into a huge sticky mess. Doesn’t matter what the weather is, or whether I added ingredients by weight or volume, or anything: If I flop some dough onto a board, you can be sure that in about 15 seconds, I’ll have hands that are completely covered with gunk. I watch a video like this and think, “Pffft, that’s not real dough. It never acts like that.” What am I missing?
It sounds like the dough may be out of balance with hydration or may need to be worked more. A lot of dough starts off sticky or what is referred to as "shaggy" and then becomes more of a smooth ball when it is kneaded and the gluten develops, giving the dough it's strength. If you're interested we do have an easy no knead dough recipe: www.kingarthurbaking.com/recipes/no-knead-crusty-white-bread-recipe. Happy to help along the way and love when an experiment works out. -🍮Nicole

What if my bread has cracks in it?
Hi, Kade! Are you referring to your baked loaf cracking in the oven, or your dough cracking as you knead it? -👩🍳Kat
@@KingArthurBakingCompany dough! It won’t smoothly go into a ball. It doesn’t close up I have this nasty line all through it
It sounds like you may have a bit too much flour in your dough, which is causing it to be dryer than it should be. It also may be that you're using too much bench flour (flour on your table or countertop used to prevent dough from sticking). Sometimes that results in flour coating the outside of the dough, which means the dough won't stick to itself as you knead it, resulting in a fissure that won't close up. When you measure out your flour, are you doing it by volume (cups) or weight? -👩🍳Kat

Apparently I’m a middle aged man who makes bread…
My dough is sticky
Hi Ashley! If you have a sticky dough, lightly flouring your hands or using wet hands to handle the dough will help prevent it from sticking to you too much. Hope this can help! -👩🍳Morgan
Are they still commenting🤫
Yep, hi! 👋 -👩🍳Kat
this is a bit counter intuitive, especially when you read on kneading. Adding flour to your work space to prevent the dough from sticking means you're gradually adding more flour than the recipe calls for. All other instruction videos/articles say you should prevent just doing that. Dough will eventually smooth out itself and gradually becomes less sticky.
You are very wrong :)
it says to flour it only if necessary?? why do you take issue with that?
This is shorter than a shirt
That is bizarrely useless. Tell us what you are doing and why and how much?
