    This was so helpful! I've been using the "kneading too aggressively" method for years and then adding too much flour because the dough was so sticky.

      Oh my God, SAME! I even knead more than 30 minutes everytime because it doesn't get elastic at all when I knead for 10 minutes. Then I get hard bread because it was overknead. 😅

    This video is amazing. There are tons of videos about bread kneading, but Kye's explanations of commonly made mistakes made this the most helpful and informative kneading video I've ever watched. I knew I was doing some things wrong (ahem, aggressive kneading...), but had no clue what or how to fix it. I feel totally enlightened now. She opened my eyes to the errors of my ways! I can't wait to use her techniques next time I bake bread.

      Hi there, Samantha, We're so glad that you found Kye's video so helpful. It's wonderful to actually see a demonstration of proper technique, instead of trying to decipher it through a written explanation. We have many more videos for you to check out on our You Tube station. Happy baking! Jonathan@KAF

    I feel so fortunate to grow up with a Mom who was a skilled home baker as well as a professional chef for my Dad. Learned to cook and bake from the earliest age possible ... Literally from about age 2 on up. Before anyone says anything about the age 2 .. Just think of having your toddler right there with you while you are mixing dough.. shaping bread rolls .. it can start as early as that. It was always a pleasant, bonding time with my parents which promoted a love for doing it myself as each age brought the ability to actually DO more myself. For so long I just took for granted that EVERYONE knew how to do these things.. Baking is such a rewarding adventure on many levels.. whether you are just trying to save money, acquire new skills.. use ingredients you can trust.. fill in when grocery stores are out of items... Make gifts for others.. Have the most delicious baked goods possible.. or work your way up to being a professional .. I have loved baking my entire life.. to anyone just starting out I hope you don't let early mishaps or not quite perfect results discourage you. Chances are you will still have an edible product.. and you have learned from the experience.. Then next time you will be better. Oh gosh.. I am on the verge of a little novella so I will stop... I love that these types of videos are so popular and that people are trying new things .. Everyone ( i think) should know at least the basics.. baking bread, once you get past the intimidation factor, you will find to be quite a simple and straight forward process. PLUS you get freshly baked at home bread ! omg .. one of the truly wonderful things in life.. : ) If you are still with me .. thanks for reading the whole rambling comment.. Stay safe.. Stay well.. and enjoy this time you have to BAKE ! : )

      My mom was a great cook. She learned from her mother and mostly from her grandmother. She could cook anything and didn't have thermometers or lots of fancy tools, just a pretty basic kitchen for the 40's and 50's. She didn't bake bread but she did bake a cake or pies once in a while. I remember watching her whip out pie crusts in it seemed like nothing flat, and the crusts would come out round. That didn't seem like such a big deal until years later when I tried it. I think the best cooks are the ones who learn to cook by the side of an adult, mother, grandmother, father, aunt, etc. They are the lucky ones. My sister turned out to be a pretty fair cook too.

      Charlie, It sounds like you have wonderful memories of your Mom's cooking and baking. Our Moms and grandmothers had a special sense about how much to add or how long to bake. No one had a scale. And they produced the great stuff of memories. ❤ -👨‍🍳Jonathan

    I just loved Kye! I would like more videos from her please as she makes bread baking appear so accessible - unlike other people I have seen on videos. I just want to sit down and have a cup of coffee with her and chat about bread. Can you do a video on poolish - when to, when not to and why? Also - the best surface to use in your home kitchen to work your dough - and how best to keep it clean? And a series on 10 of your bread bakers and the top ten favorite tools they have in their home kitchen - which scale do they use? Which bennatons and why? Which mixing bowl - how big>? What material? Which measuring cups? And so on?Thanks

    My conclusion, I am way too aggressive with kneading the dough for my pizza bases - it then gets sticky, then I add more flour..............
    Any pizza dough videos would be really appreciated, some say roll out the pizza at the final stage, others say it knocks the air out etc.

  • @ryanlemar6784
    @ryanlemar6784 Před 4 lety +1

    Do you tend to proceed directly from mixing the dough to kneading? I’ve heard that some people will let the mixed dough rest for a bit before kneading to make it easier to work with?

    • @KingArthurBakingCompany
      @KingArthurBakingCompany  Před 4 lety +1

      Hi Ryan! It depends on the recipe we are following. A rest period is helpful for softening the bran in whole grain flours. Many breads also benefit from an autolyse stage - a rest period when flour fully hydrates, and enzymes are activated that stimulate proteins creating gluten development. This method also reduces kneading time. Try experimenting with both! Robyn@KAF

    • @KingArthurBakingCompany

      Hi Raj, this recipe requires you to deflate the dough in step 5 before shaping. I don't see where you are referring to an additional deflation. Please give our Baker's Hotline a call at (855) 371-2253, so that we can help you figure this out and get you on the path to success. Kindly, Jonathan@KA

    What if flour too dry?

    • @KingArthurBakingCompany
      @KingArthurBakingCompany  Před 4 měsíci

      If the flour makes the dough too dry to handle? You can sprinkle about a 1/2 tsp of water on the workbench, tiny bit at a time until you get a good handle of the dough again. Please let us know if this helps, Sarah! -🥐Lily
