Cultured vs. uncultured butter-what’s the real difference?

- If you’re like me and live in the U.S., you probably buy uncultured butter out of convenience and habit. Maybe you didn’t even know it was called uncultured or that there was another option?
Unlike Europe, where cultured butter reigns, here in the U.S. we largely stick to sweet cream butter aka uncultured butter.
But, what's the difference? Well... it all comes down to flavor!
Cultured butter relies on certain bacteria being added to the cream, which produces a new flavor and aroma profile compared to uncultured butter. It tends to be slightly nutty rather than the mild, sweet taste of uncultured butter (aka sweet cream butter).

I live in Germany and I love cultured butter more than the regular sweet cream butter. I have rheumatoid arthritis and it makes a huge difference when I consume cultured butter. It reduces inflammation in my fingers. So despite the (imho better) taste it seems to have a different impact on my gut health.
to me i like the taste of cultured butter because it has a fermented flavor of yogurt, which adds extra depth to butter than butter that is made from fresh milk doesn't have. basically cultured butter is yogurt that is churned into butter.

Vons carries cultured butter, Vermont brand in both salted and unsalted, and periodically available, a French brand that has multiple cultures.
Just made my own cultured butter using the Filmjolk yogurt culture. The difference in flavor is very subtle but I enjoy it. Would culturing the cream make it easier to digest?
Hmm it depends what components you look at. It would make it easier to digest if you're lactose intolerant since the culture uses up lactose, but I don't think it would change the protein, fat, etc.

I won't buy uncultured anymore...Trying to find an Irish cultured butter now. Cultured butter is cheaper than regular at my store, Safeway, for some reason. The brand is called Vermont Creamery. Im going to make a sage brown butter sauce. I don't know if it will also taste better than uncultured brown butter. I love that you have a periodic table wallpaper on your computer. HAPPY NEW YEAR!

In America, we get too much low quality, processed, fast produced food. Not interested in that. I prefer cultured butter. I love Kerry Gold and Beurre d'Isigny. President is all right. Our butters are white and the French ones tend to be yellowish.
White or yellow depends on the cow's diet. Grass fed produce yellow butter and cows fed on hay and grains are produce white butter.
