Ingredients:
2 lbs……………chicken wings
12 pieces…….dried shiitake mushrooms
1 cup…………..tofu puff
2 ……….……….scallions
4-6………………ginger slices
1 tbsp………….oyster sauce
1 tbsp...........Shaoxing wine
1 tbsp………….soy sauce
1/2 tbsp………dark soy sauce
Chicken marinate:
1/2 tsp salt
Pinch of white pepper
Mushroom marinate:
1/4 tsp salt
1/4 tsp sugar
1 tbsp oil
Cornstarch slurry:
1 tbsp cornstarch + 1.5 tbsp water; mix well

4-6 片 薑
1 湯匙 蠔油
1湯匙 紹興酒
1湯匙 生抽
1/2 湯匙 老抽
醃雞翼:
1/2 茶匙鹽
少許白胡椒粉
醃冬菇:
1/4 茶匙 鹽
1/4 茶匙 糖
1 湯匙 油
生粉水:
1湯匙生粉(或粟粉/玉米淀粉) + 1.5湯匙清水; 拌勻
