    NAKHON SI THAMMARAT, THAILAND (นครศรีธรรมราช) - Welcome to southern Thailand, and one of my favorite provinces in all of Thailand - Nakhon Si Thammarat. The food is some of the best and spiciest that you’ll find in Thailand. Because of it’s tropical climate, Southern Thailand is home to many unique and interesting fruits and vegetables. Today, we’re eating nipa palm fruit (จาก jaak in Thai), which looks a lot like an alien spiky ball - or a wrecking ball!
    In the Pak Phanang district of Nakhon Si Thammarat, in a wetlands area with mangroves we headed to the community center where they grow and produce products from the nipa palm tree. Along with the fruit, you can tap the sap, to make vinegar, alcohol, or nipa palm sugar. Basically every part of the nipa palm tree is useful somehow. But the fruit is perhaps one of the craziest looking fruits you’ll ever see.
    In order to make the curry, you actually use the young nipa palm fruit, and not the jelly seeds, but rather the woody stem of each piece of fruit, sliced thin. It almost reminded me of young jackfruit or bamboo shoots, with an amazing meaty texture and fibrous. The curry was outstanding, so much pepper and spice, and with a delicious local chicken.
    We also made khanom jaak (ขนมจาก), which is a very popular Thai sweet snack made with the nipa palm sugar syrup. They used rice flour, egg, and only nipa palm sugar, wrapped in nipa palm leaves and grilled over fire. You’ll find khanom jaak all over Thailand, but this was by far the best version I’ve ever had, mildly sweet, with such an intense fragrance from the syrup and nipa palm leaves.
    It was an amazing day in Southern Thailand, learning about unique Thai food of Southern Thailand and the amazing nipa palm fruit!

    I just love how common food wrapped in leaves are in southeast asia. I just love all the food wrapped in banana leaves, coconut leaves, pandan leaves, palm leaves, etc. So resourceful. No waste.

    I have never seen such a plant in my life... so I wanted to learn more about it.     Interesting. I'm Filipino and we build houses out of nipa palm, but never have I thought the fruit would be edible. That or being in a region where we eat spicy food everyday, we didn't necessarily need to eat the nipa palm. It's as much a revelation to me as when I realized we can eat coconut shoots like bamboo shoots!

      pre kinakain din ang bunga ng nipa sa pinas pag binuksan mo me puti yun na prang mukhang candy na hall per flat alam mo yung kaong diba ayun madalas sa salad natin yun. ginagamit din yung parang tuba.. yung sap pag tinabas yung fruit cocolectahin mo yung sap madalas gamit ng bamboo madami kasi a probisya namin lalo na sa panglao. tas pre ginagawa din sugar yan.

      I know ! We missed out on a lot of food sources tho it is all around us in bountiful amounts . I believe it is because we are separated from the Asian continent , we " didn't get the word". Raised in a rural area , my mother continously pregnant , my father unendingly gambling , HUNGER is a constant presence . Looking back , with knowledge of other food cultures , my grief and fury at how needless it all were. My parents and neighbors' ignorance, laziness , lack of initiative , lack of love for the children ( physically , verbally abusive ), lack of curiosity, lack of adventure --reasons I attribute to slow progress . We had such fertile soil yet everybody in our barrio had NO GARDEN ! As children we didn't know better. Dishes cooked are caveman style - boil water, salt it , drop the fish - done! Yet lemongrass , ginger , tamarind etc abounds . Nipa were all around, only used for roofing. Coconuts all around.
      I'm still amazed I've come a long way.
      I know an elderly couple who came to USA . We cooked our favorite dishes. Bought a coconut , manong did not know how to break it , manang poured a lot of water to a stir fry dish, para meron tayong sabaw. So we will have soup, she said .
      Maybe we've learned to do better culinary wise but my relatives still snob curry , chilis
      and they pour condensed milk unto spaghetti. Pizza dough is full of sugar.

    the nipah palm is very commonly found in the tropical swamps not only in southern Thailand but also Malaysia, mekong delta in vietnam, the carribean and central america. its seeds containing the jelly-like texture are edible and thus suitable in making desserts including ais kacang in Malaysia. however, the fruit must be in the middle age as the seeds get harder as they age. the roof made from durable leaves is called attap. the sap is also used to make a non-alcoholic drink called 'air nira' in Malaysia as well as toddy, the palm wine. i have never seen a very young nipah fruit used in making curries as in this video and thus it is very unique! the toy made from weaved young leaves given to Micah reminds me of the leaf weaving crafts done by the Mah Meri tribes at Carey Island in Malaysia, belonging to the aboriginal Senoi group. Of course, the syrup tastes a bit salty since it is grown close to the river estuary.

      @ vn có đường thốt nốt đó thôi. Chứ dừa nước khó lấy mật hơn thốt nốt nhiều, do nước lên nước xuống. Thời bao cấp thiếu thốn do nhà nước ngăn sông cấm chợ, k sản xuất, giao thương được. Mình người nam, ngày nhỏ vẫn ăn đường thẻ, đường thốt nốt. Bây giờ bắt đầu quay lại với các loại đường truyền thống thay vì đường trắng tinh luyện đây.

    SEA countries can learn a lot from this. In our province, there are lots of nipa trees but the only part commonly used is leaves for roof. I never knew that the fruit is edible and we can make vinegar and sugar from its sap. Thanks for featuring this particular Nipa Palm Tree.

    The sweet snack looks just like a delicacy in Pangasinan, Philippines. It's called "tupig". Almost the same ingredients and process of cooking too.

    Mark good to know that you featured this type of food (natively known), that found only in some remote areas like this and i'm grateful what you have featured.
    With this, i am highly recommended to go to our place in the Philippines particularly in Mindanao, Agusan Del Norte (Butuan City). Where you can feature some of our delicacies. We also have Sago trees that plenty of snack food could be made. And a lot more.

    We call it "Gol" tree in Bangladesh. There's a kind of honey comes from that fruit as well. Natives use the leaf to build houses.

    Amazing lesson, thank you so much. I used to get this sweet covered with leaves in alms round often but didn't know how it is made of. I like the nypa palm juice and sugar made from it thinking it is 100% organic.
