  • We bought these fresh leaves here in London, washed and blended using a superior blender. Cooked with fresh oven dried fish, added butter beans, vegetables and cooking oil. Cassava leaves stew is a very popular and delightful dish in Sierra Leone. The "Thamnes" call it 'ka romboh' and the Mendes call it 'jaki tomboi' cooked differently. Nice to see the leaf of origin. I love cassava leaf, and made it for the first time on Saturday 8/18/18. I was intimidated for years, but after watching umpteen videos, I gave it a go. It was delicious. So, gone are the days of waiting for someone to make it for me. ❤

Don't blame you Terri, thanks for trying anyway. Cassava leaves are not the easiest to cook, the process of preparing the leaves is a factor. We also know that there are different species of the cassava plant and some cassava roots are described as high in Hydrocyanic acid which is poisonous. This is the cassava that we must not eat raw due to its bitter taste and the acid water from the roots. We discarded the water when it is grated to make the 'garie' from the cassava roots. The other type of cassava plant produce the red skin cassava root and it is sweet and safe to eat raw. The leaves are a pleasurable and healthy treat when cooked the traditional way. Sierra Leone 'jakky -tom-boi.' listen to the song. jakky-tom-boi ya - jola- bay -tay..... Have a great day.

I think this is the way. A lot of related videos show much washing of the ground leaves, I wanted to try to keep that green juice, because of vitamins or something. SO, use the same water to blend many batches of leaves, it gets pretty green! I cook the whole mess in a pressure cooker with the seasonings that people show on CZcams, but not as much. I'm getting to like it! This is still pretty novel- I'm growing a little Cassava and only recently found out that people cook the leaves! A good surprise because I'm growing them. What would we do without CZcams? Enjoyed your patient explanation, and that you were starting from the actual tough and apparently inedible leaves. Thanks!

We call it katapa in zambia
We use a motor when pounding it coz using a grinder makes you throw away nutritious water. Next time use a motor to pound it

This is also popular dish in Congo, Angola, Gabon, etc. Matter of fact in the whole continent I think only north of Africa, Namíbia and South Africa 🇿🇦 doesn't make or appreciate pondu/cassava leaves. So it's an African main dish.

In Gambia it’s cooked with groundnut and it looks just like egusi in appearance. Also, yes you can try it out with actual egusi. It’s so delicious ❤❤❤
