How to Make Mallorcas (Puerto Rican Sweet Bread) - Easy Puerto Rican Recipe

- Mallorcas or Pan de Mallorca is a Puerto Rican sweet bread. They are usually shaped like snails and topped with lots of powdered sugar. They are soft and chewy on the inside and pair perfectly with a cup of coffee. We highly recommend trying this bread for breakfast with your cup of coffee or for a sandwich. Be forewarned, they are addictive!

Ingredients:
½ cup lukewarm milk (about 110 degrees)
½ cup lukewarm water (about 110 degrees)
1 ½ tsp yeast
½ cup sugar
2 ½ cup all purpose flour (divided in ½ cup and 2 cups), plus additional as needed for dusting
½ tsp salt (optional)
3 large egg yolks
4 tbs butter melted and cooled, plus 2 tbs for brushing on top
Powdered sugar, for dusting

I have been looking for this recipe since I was a child. I am not puerto rican but when my family was stationed there in the army, my bus driver always brought me a mallorca every Friday. He was such a sweet older man ❤❤❤
Pan de Mallorca is a type of sweet bread also called ensaimada. It was brought to Puerto Rico by the catalanes of Mallorca (Baleares). The best version of this bread was the one popular in Ponce, PR, by the descendants of valençianos. I remember a baker of Ponce (of Valençia roots) who made some of the best Pan de Mallorca. The well known bakeries in Ponce due to their excellent Pan de Mallorca were La Valenciana,Sol de Brinquen, La Imperial y Bigas o Vigas.

Thx for sharing these. Not sure if I'll ever make them again. Just because. And I enjoy making yeast breads. High hydration doughs are frustrating. If I had grown up eating them, maybe. Nice to have one's own cultural foods. But I enjoy foods from many cultures, however, I tweak them healthier (didn't today/not for us). Thx again & kudos to the lady who demonstrated, once again. I've watched a few food videos in my day & she was excellent!

Hi there....I made these...I got 26 small and medium ....but...I have to say if you are using instant yeast you may not see the bubbles...recipe is easy to follow....you both give great directions.....thanks for sharing

This recipe has some different details I hadn’t seen before. I’ve never done a sponge when baking them and proofed a second time. I’m definitely going to try this the next time I bake them.

@@JeffandJosPuertoRicanKitchen you did a short twenty minute rest under the cellophane. I’ve been doing a 45 minute rise in oven on the proofing setting.
I lived in San Juan for a few years and it’s my goal to perfect the mallorca. lol

@@JeffandJosPuertoRicanKitchen First, I would try going the the Kitchenaid site themselves. If not them, then Amazon should have them, but make sure you get the right sized one that fits your mixer.

My mixer is 5qt
They were ok. My dough didn't rise as well and the Mallorca was a bit dry. Still tasty though just not like i remember.
